    Shrimp Scampi with Orzo

    This lemon pepper shrimp scampi is made with orzo pasta instead of your regular linguini or spaghetti noodles. I love the shape of orzo pasta cause it kind of reminds me of rice. It’s also much quicker to cook than regular rice. Hope you enjoy this recipe for shrimp scampi.

    Ingredients Needed for Shrimp Scampi with Orzo

    • Uncooked orzo - cooked and drained
    • Chopped fresh parsley - is a type of herb that is commonly used as a garnish or seasoning in various dishes. It has a bright green color and a mild, slightly bitter taste. Parsley is a good source of vitamins A and C, as well as minerals such as potassium and iron.
    • Unsalted butter, divided - is the most commonly used type of butter in baking, as it allows for more control over the amount of salt in the recipe.
    • Peeled and deveined jumbo shrimp - The main star of the dish!
    • Minced fresh garlic - Chopped fresh garlic can take some time to chop so I often always use the freshly minced garlic that comes already made in a jar. 
    • Freshly squeezed lemon juice - This adds a nice burst of citrus flavor to the marinade to help enhance the choice of protein. Use freshly squeezed over bottled juice.
    • Freshly ground black pepper 
    • Salt, divided

    Optional Additional Toppings for Shrimp Scampi: Freshly chopped scallions, add in some frozen peas towards the end of the cooking period 

    Additional Items Needed: NON-STICK SKILLET, heat-resistant kitchen utensils for stirring

    How to Make Shrimp Scampi with Orzo

    Step 1 Cook orzo according to package directions, omitting salt and fat. Drain. Place orzo in a medium bowl. Stir in parsley and ¼ teaspoon salt; cover and keep warm.

    Step 2 While orzo cooks, melt 1 tablespoon of butter in a large nonstick skillet over medium-high heat. Sprinkle shrimp with the remaining ¼ teaspoon salt. Add half of the shrimp to the pan; sauté 2 minutes or until almost done. Transfer shrimp to a plate. Melt 1 teaspoon of butter in a pan. Add remaining shrimp to pan; sauté 2 minutes or until almost done. Transfer to a plate.

    Step 3 Melt remaining 1 tablespoon butter in pan. Add garlic to pan; cook 30 seconds, stirring constantly. Stir in shrimp, juice, and pepper; cook 1 minute or until shrimp are done.

    What goes best with Shrimp Scampi? 

    Any long noodle such as linguini, spaghetti, angel hair, or fettucini will work great with shrimp scampi. If you’re looking for a low-carb or keto option try zucchini noodles. Steamed white rice, polenta, gnocchi, risotto or a nice piece of crusty bread. 

    What is shrimp scampi sauce made of? 

    This particular shrimp scampi recipe is made without wine. It just uses lemon and the main ingredient for the sauce is butter. 

    What else can you season shrimp scampi with? 

    If you don’t like lemon pepper try another seasoning like Cajun, Italian, or Old Bay Seasoning.

    Ingredients

    • 1 cup uncooked orzo
    • 2 tablespoons chopped fresh parsley

    • 7 teaspoons unsalted butter, divided
    • 1 ½ pounds peeled and deveined jumbo shrimp
    • 2 teaspoons minced fresh garlic
    • 2 tablespoons fresh lemon juice
    • ¼ teaspoon freshly ground black pepper $

    Instructions

    1. Cook orzo according to package directions, omitting salt and fat. Drain. Place orzo in a medium bowl. Stir in parsley and ¼ teaspoon salt; cover and keep warm.
