    Smoked Bacon Wrapped Shrimp

    • Large shrimp โ€“ Use large or jumbo shrimp that have been peeled and deveined. Larger shrimp hold up better during the smoking process and pair perfectly with bacon.
    • Bacon โ€“ Thin-cut bacon works best because it cooks faster and crisps up more easily than thick-cut bacon.
    • Olive oil โ€“ Helps the seasoning stick to the shrimp and adds a little extra moisture.
    • BBQ seasoning โ€“ Adds smoky, savory flavor. Use your favorite store-bought blend or homemade seasoning.
    • Brown sugar โ€“ Optional, but it adds a subtle sweetness that complements the salty bacon.
    • Toothpicks โ€“ Used to secure the bacon around each shrimp while cooking.

    How to make Smoked Bacon Wrapped Shrimp

    Step 1: Remove the shell from the shrimp and wrap the Prosciutto or Bacon around the shrimp. The Prosciutto I had was very long so I cut mine in half. Season the shrimp and brush with olive oil. Set aside.

    Step 2: Preheat your smoker to 225. Place the shrimp on the smoker and set a timer for 30 minutes. Shrimp are done when the inside is white and the skin is pink.

    Pro Tips for Smoked Bacon Wrapped Shrimp

    • Choose jumbo shrimp whenever possible for the best texture.
    • Avoid overcooking the shrimp since they can become rubbery.
    • Thin bacon cooks more evenly than thick-cut bacon.
    • Use a wire rack for easier handling and cleanup.
    • Try different pellet flavors such as apple, cherry, hickory, or pecan.
    • Brush the shrimp with BBQ sauce during the last few minutes of cooking for added flavor.
    • Secure the bacon tightly so it stays wrapped around the shrimp while smoking.

    Storage

    Store leftover smoked bacon wrapped shrimp in an airtight container in the refrigerator for up to 3 days.

    To reheat, place the shrimp in an air fryer at 350 degrees F for 3 to 4 minutes or warm them in the oven until heated through. Avoid microwaving if possible, as it can make the shrimp rubbery and the bacon soft.

    Freezing is not recommended because the texture of the shrimp can change after thawing.

    Shrimp can take anywhere from 20 to 30 minutes to smoke at a temperature of 225 degrees. They don't take very long at all so you can make some pasta salads while they are smoking.

    Smoking shrimp gets done pretty fast so you will want to use a strong wood such as Pecan or Hickory.

    Smoked Bacon Wrapped Shrimp - massive jumbo shrimp wrapped with bacon and marinaded in a teriyaki pineapple sauce - The perfect appetizer or entree for your next bbq or entree depending on what size shrimp you use.ย 


    Ingredients

    Scale

    10 colassal shrimp or Tiger Shrimp

    5 thinly sliced strips ofย Prosciutto

    ยผ cup of pineapple juice

    1 tablespoon of soy sauce

    1 tablespoon garlic

    1 tablespoon of ginger

    2 tablespoons of chopped scallions

    1 tablespoon of brown sugar


    Instructions

    Remove the shell from the shrimp and wrap theย Prosciutto around the shrimp. Theย Prosciutto I had was very long so I cut mine in half.

    In a bowl combine the ingredients for the marinade. Pineapple juice, soy sauce, brown sugar, ginger, garlic, and green onions.

    Place the bacon wrapped shrimp in a gallon zip lock bag and add the marinade. Let that sit in the fridge for an hr.

    Preheat your smoker or grill and set it to the highest temp possible. Place the shrimp on the grill and cook on one side for 7 minutes. After the 7 minutes is over flip the shrimp and cook for another 3 minutes. Serve with your favorite dipping sauce.
