Happy Memorial Day Weekend! Hope everyone is having a great 3 weekend. I know Memorial Day is the start to many fun and exciting things like the start of lake season (if you live in the Midwest), grilling season, and Summer!
My favorite part of Summer is going to the lake and grilling/smoking of course.
These smoked bacon wrapped shrimp are a great appetizer to bring to any BBQ or cookout this Summer!
Ingredients Needed
Colossal shrimp or Tiger Shrimp
Thinly sliced strips of Prosciutto - Thinly sliced bacon can be used instead of Prosciutto.
Seasoning - My favorite seasoning to use is either Dano's, a blackened dry rub seasoning, or Garlic

How to make Smoked Bacon Wrapped Shrimp
Step 1: Remove the shell from the shrimp and wrap the Prosciutto or Bacon around the shrimp. The Prosciutto I had was very long so I cut mine in half. Season the shrimp and brush with olive oil. Set aside.
Step 2: Preheat your smoker to 225. Place the shrimp on the smoker and set a timer for 30 minutes. Shrimp are done when the inside is white and the skin is pink.
Smoking on a Charcoal Grill
Allow 30 minutes to 1 hour for the coals to burn down to the correct temperature and the water to heat up. Next, drop damp wood chips or dry wood chunks directly onto the coals. Then place your food on top of the cooking grate over the water pan and cover your grill. - from weber.com

The smoker is so great for cooking simple basic food like smoked corn on the cob, smoked meatloaf, bbq ribs for beginners, and smoked salmon. The smoke gives the salmon an extra layer of flavor that you wouldn’t get from a grill.
What Smoker do I have? I have had my Traeger smoker for a very long time and I would recommend that brand to anyone wanting to learn how to smoke food. Traegers are kind of pricey but there are some very reasonably priced smokers for under $100.
Some smokers require a preheat before setting the actual temperature to the desired one. Read the instruction manual your smoker came with to make sure.
Wood Chips or Pellets: There are so many different kinds of wood chips to experiment with and you can find them at any hardware store. Places like Target and Wal-Mart also sell them. I’ve even seen wood chips at the grocery stores.
Recipe FAQs
Shrimp can take anywhere from 20 to 30 minutes to smoke at a temperature of 225 degrees. They don't take very long at all so you can make some pasta salads while they are smoking.
Smoking shrimp gets done pretty fast so you will want to use a strong wood such as Pecan or Hickory.
My favorite smoker is either a Traeger or the Ninja Wood Fire grill. I love this cause it's small and easily transportable.

Ingredients
10 colassal shrimp or Tiger Shrimp
5 thinly sliced strips of Prosciutto
¼ cup of pineapple juice
1 tablespoon of soy sauce
1 tablespoon garlic
1 tablespoon of ginger
2 tablespoons of chopped scallions
1 tablespoon of brown sugar
Instructions
Remove the shell from the shrimp and wrap the Prosciutto around the shrimp. The Prosciutto I had was very long so I cut mine in half.
In a bowl combine the ingredients for the marinade. Pineapple juice, soy sauce, brown sugar, ginger, garlic, and green onions.
Place the bacon wrapped shrimp in a gallon zip lock bag and add the marinade. Let that sit in the fridge for an hr.
Preheat your smoker or grill and set it to the highest temp possible. Place the shrimp on the grill and cook on one side for 7 minutes. After the 7 minutes is over flip the shrimp and cook for another 3 minutes. Serve with your favorite dipping sauce.
