Why Carnivore Chili?
Before when I would make chili, I would add in a can of chili beans (for fiber) but with carnivore chili you leave the fiber out.
Carnivore chili is not your average bowl of chili. While traditional recipes often include a mix of vegetables and beans, carnivore chili focuses on a variety of meats, making it a protein-packed powerhouse. It’s perfect for those following a high-protein or low-carb diet, or for anyone who simply loves the taste of succulent meats. I chose to only use grassfed ground beef for my chili but feel free to add other types of beef like pork or beef chuck.
The other ingredients you should already have in your pantry such as the spices and beef broth.

To make the ultimate carnivore chili, you’ll need the following ingredients:
- 2 pounds ground beef: The base of the chili — hearty, rich, and satisfying.
- 1 cup beef broth: Enhances the meaty flavor.
- 2 tablespoons butter, ghee, or tallow
- 3 tablespoons chili powder: Adjust according to your spice preference.
- 1 tablespoon cumin: For a warm, earthy flavor.
- 1 teaspoon cayenne pepper: Optional, for heat lovers.
- Salt and pepper to taste: Essential seasoning.
How to Make Carnivore Chili
Step 1 Brown the ground beef
In a large skillet or Dutch oven, heat the butter or tallow over medium heat. Add ground beef and cook until browned, breaking it up as it cooks. I transferred the cooked beef into a larger pot when I was done.

Step 2 Add seasoning and broth Stir in salt, optional seasonings, and beef broth. Add liver if using and cook for 2–3 more minutes.

Step 3 Simmer
Lower the heat to medium-low and let everything simmer for 10–15 minutes, stirring occasionally, until thick and stew-like..

Tips for the Perfect Carnivore Chili
- Use a fattier beef blend (80/20) — the fat adds moisture and flavor - I really like the grass fed ground beef from Alid.
- Add bone broth slowly — just enough to make it saucy but not soupy
- Simmer longer if you want a thicker consistency
- Chop liver finely if using — it blends right into the meat and is nearly undetectable
- Serve the chili with a fried egg on top or with this Carnivore Bread!
