White chicken chili makes an easy and quick meal that is cooked entirely in your Instant Pot! This chili is full of great for Weight Watchers and uses a lot of zero-point ingredients such as green chilis, chicken, and beans. The chicken and beans are cooked in a flavorful chili broth and you can top your chili with corn, cheese, or wonton chips.

It almost feels like Fall already here in the Midwest and I’ve been busting out the Instant Pot for making my Chicken and Gravy recipe and Weight Watchers Taco Soup recipe. Our Winter here sucked last time with all the damn blizzards and snowstorms we had. Not to mention the 12 ft of snow piled around everyone’s houses. I’m praying we have a mild Winter starting in December. *Fingers crossed* I can’t get a new SUV until May of next year and 4 Wheel drive cars are essential in the Midwest.

Why You Will Like This Recipe
For this Instant Pot White Chicken Chili, the chicken cooks in the Instant Pot so you don’t have to worry about cooking it beforehand. After the 10 minutes is up, you won’t believe how easy the chicken shreds! It’s almost magical watching that happen. There are many different topping options you can add to this chicken chili. See info below.
There are different variations of white chicken chili out there and some recipes call for adding cream cheese or sour cream in the pot at the end when the chili is done cooking. Since this is a WW version of white chicken chili, I decided to leave the fun stuff like that out for you to make it zero points, but doesn’t that make this chili recipe sound so much better? If you want to make a creamy version of this opt for Greek Yogurt instead of cream cheese or sour cream and add it at the end of the cooking process.
Ingredients Needed for White Chicken Chili
- 2 large boneless skinless chicken breasts, cut into bite-sized pieces - can use frozen
- 1 medium finely chopped onion
- 1 garlic cloves, minced
- 1 tablespoon of cumin
- ¼ teaspoon of black pepper
- 1 4.5 oz chopped green chiles, undrained
- 1 15oz can cannellini beans, rinsed and drained (such as Goya)
- 2 (14-ounce) can fat-free, less-sodium chicken broth
- 4 tablespoons of nonfat plain Greek Yogurt
- Toppings
- Cheddar Cheese
- Corn
- Cilantro
How to make Instant Pot White Chicken Chili
- Turn your Instant Pot to Saute mode. Spray the pot with cooking spray and add the diced onions. Cook for 4 to 6 minutes.
- Add garlic, green chilis, drained cannellini beans, and chicken breast. Plus cumin and black pepper.
- Pour the chicken stock into the pot.
- Close the lid and set to sealing and set the pressure cooker to 10 minutes. Allow 10 minutes for the pressure cooker to build up.
- When the time is up, allow the instant pot to natural release.
- Take the chicken out of the pot and shred it. Add it back into the IP. Slowly stir in the Greek Yogurt or sour cream (substitute) if you like your chicken chili creamy.
- Top with corn, cilantro, or cheddar (have to count points for the cheddar).
Toppings for Instant Pot White Chicken Chili
Like I mentioned above, all the ingredients in this chili/soup base are zero points. Some of the toppings will not be zero points so of course, you will have to use your WW app to figure out those extra topping add-ins.

- Sour Cream or Greek Yogurt

What foods can be cooked in an Instant Pot?
There are some foods that shouldn’t be made in an Instant Pot and some foods that should. This is a personal preference for me. Examples of foods that should be made in an Instant Pot are foods like White Chicken Chili, Soups, Stews, Roasts, and different types of meat. When watching shows like Iron Chef they use a pressure cooker to cook meat because they know they the pressure cooker can get good results in under the shows amount of time. Iron Chef is usually an hour show.
Then there are the foods that shouldn’t be cooked in an Instant Pot. I was recipe testing apple crisp yesterday in the Instant Pot and was really disappointed in the outcome. Apple crisp is supposed to have a crunchy buttery oat topping and the result was more like oatmeal. Very disappointed in that and dessert crisps are meant to be made in an oven. Not an Instant Pot. If you ever see a recipe for IP Apple Crisp RUN! Bake it in the oven instead.
Can you freeze White Chicken Chili?
In order to freeze White Chicken Chili let the soup completely cool off before adding them to a freezer storage bag or your container of choice. When ready to eat the chili take the chili out and let it defrost and heat it up on a stove top or in the microwave.

Hi, I made this and doubled the recipe so I can take it to work for lunch. It was good, but as my husband said, it’s not really chili, it is soup. Regardless, it was healthy and good!
