    The technique used here is the same one found in classic icebox cake like this Oreo Icebox Cake. The yogurt slowly softens the cookies as the dessert chills, creating a cohesive, no bake texture without the need for baking or added fat. It is a simple method that has stood the test of time. People are rediscovering this and acting like its something brand new!

    Why This Recipe Works

    Thick Greek yogurt creates a creamy base that mimics cheesecake filling. Crushed cookies absorb moisture as the mixture chills, softening into a no bake crust. This kind of reminds me of 2 Ingredient Cheesecakes (High Protein) from way back but with cookies added in.

    People are basically just adding ingredients into a yogurt cup and that is what this reminds me off. I'm not really sure where Japanese fits in here but here we are I guess? lol

    As the cheesecake rests in the refrigerator, the yogurt hydrates the cookie crumbs and everything firms up into a cohesive, sliceable dessert. This is the same concept used in refrigerator cakes and no bake pies.

    Ingredients Needed for Japanese Cheesecake

    You only need two ingredients!

    1 container Greek yogurt - Use a thick variety like Siggi’s for best results. Plain or lightly sweetened both work.

    5 Graham crackers or Biscoff Cookies - broken into smaller sheets

    How to Make Japanese Cheesecake

    Use a yogurt cup that is already portioned or spoon some yogurt into a glass jar. Then add in whatever mix ins you like - dry vanilla pudding powder, cheesecake pudding, or vanilla extra. Etc.

    Insert smaller graham crackers or cookies into the yogurt and evenly spread them out.

    Chilling Time Matters

    After 2 to 4 hours, it will be fully set with a classic no bake cheesecake texture.

    If you want clean slices, overnight chilling works best.

    Insert banana slices inbetween the cookes for an easy Banana cream pie version!

    Add in some chilled coffee a pinch of cinnamon to the graham crumbs for warmth to make a tiramisu version


    Drizzle honey or maple syrup on top for extra sweetness.
    Stir in a little vanilla extract for more cheesecake flavor.
    Top with fresh berries or cherry pie filling before serving.

    Add some magic shell on top!

    You can also portion this into small jars for an easy grab and go dessert.
