    If you are looking for a fresh and simple side dish that feels a little different from your usual salads, this carrot ribbon salad is a great one to try. It takes just a few minutes to make and uses basic ingredients, but the result looks beautiful and tastes bright and flavorful.

    This recipe is made by peeling carrots into thin ribbons, then tossing them with a light dressing that soaks into every bite. The texture is crisp yet tender, and it pairs well with just about anything from sandwiches to grilled proteins. It is especially nice when you want something quick, healthy, and a little more interesting than plain veggies.

    You can have this salad ready in about 10 to 15 minutes, with no cooking required. It is perfect for meal prep, easy lunches, or a quick side to round out dinner.

    ๐Ÿงก Why Youโ€™ll Love This Carrot Salad

    The hard part about making this salad was slicing the carrots. You will need a vegetable peeler or a mandoline to slice the carrots into thin ribbons. Just be careful. It's kind of like the Viral Cucumber and Sweet Pepper Salad or Dense Bean Salad!

    PS I don't have many carrot recipes on this site so this is a first.

    ๐Ÿฅฃ Ingredients Youโ€™ll Need

    If you keep these 3 ingredients in the pantry - Soy Sauce, Sesame Oil, and Rice Vinegar you can make just about an Asian dish you will ever want. All I had to get was the carrots.

    • 2 medium carrots, peeled into ribbons or shredded
    • 1 tablespoon rice vinegar โ€“ Adds a tangy punch
    • 1 teaspoon low-sodium soy sauce โ€“ Umami depth - Sub coconut aminos or tamari if you're gluten-free or soy-free.
    • 1 teaspoon sesame oil โ€“ Adds that nutty, toasty flavor. Donโ€™t have it? Avocado oil or olive oil will work, but the flavor will be milder.
    • ยฝ teaspoon honey or maple syrup โ€“ Optional, for a hint of sweetness
    • Pinch of sea salt
    • Toasted sesame seeds โ€“ Optional topping
    • Optional: red pepper flakes, chopped green onion, or cilantro for garnish

    • No sesame oil? Use olive oil or avocado oil, but youโ€™ll miss that signature flavor.
    • No rice vinegar? Apple cider vinegar works, but the taste will change.
    • Soy-free? Use coconut aminos instead.

    Step 1 Peel or shred the carrots into a bowl. I used a vegetable peeler.
