    4 Ingredient Taco Dip with Cottage Cheese

    For a deliciously spicy and cheesy dip that will be the star of any gathering, this Taco Queso Dip is a must-try. It combines the rich, creamy texture of melted cheese, cottage cheese, with the bold flavors of taco seasoning, making it the perfect companion for tortilla chips, vegetables, or even drizzled over your favorite tacos. Here’s how you can make it:

    Why You Will Like This Recipe

    It looks messy but it's the yummiest thing I've made in the past 2 weeks.

    I’ve been trying to eat more protein lately and I’ve made this recipe quite a few times. It has 42 grams just with the cottage cheese, ground beef, and cheddar cheese. Plus, it helps keep me full for a very long time where I don’t have to snack!

    I love that it just comes together in the microwave like that Lazy Pancake Bowl (Tiktok Recipe) recipe that I shared earlier on this website and it is so easy.

    For even more protein serve it with some Quest Protein Chips but I just use good old tortilla chips to dip it with.

    Ingredients Needed

    • Ground beef - Is considered better than higher fat options for several reasons. First, it has less saturated fat, which can contribute to heart disease and other health issues. Additionally, it tends to have fewer calories per serving, making it a good option for those watching their weight. The 96% lean ground beef from Aldi is my favorite.
    • Taco seasoning, lower sodium if possible
    • Cheddar cheese - I like to use Reduced-Fat Cheese because it has a lower calorie count and less saturated fat than regular cheese, but it may also have a different taste and texture. It also helps with keeping the calorie count pretty low for this recipe.
    • Cottage cheese - cottage cheese is pretty high in protein about ½ cup has 12 grams! It’s so versatile
    • Salt and pepper to taste
    • Optional garnishes: chopped cilantro, sliced jalapenos, sour cream, diced avocado

    How to Make Taco Dip

    Step 1: Cook the Ground Beef: In a large skillet over medium heat, cook the ground beef and onion together. Break the beef into small pieces as it cooks. Once the beef is browned and the onion is soft, drain any excess fat. Stir in the taco seasoning mix, add a splash of water if needed, and simmer for a few minutes until the mixture is well combined and slightly thickened. Season with salt and pepper to taste.

    Step 2: In a Pyrex dish combine the ¼ of the taco meat, ½ cup of cottage cheese, 2 tablespoons of a cheddar, and place it in in the microwave. Microwave on high for 1 to 2 minutes.

    Combine and Serve: Once the cheese is melted and smooth, stir in the cooked ground beef mixture and cheddar cheese. Continue to cook, stirring frequently, until the dip is heated through.

    Recipe Tips

    If you are making this for yourself save the rest of the ground beef mixture in air tight container in the fridge to make throughout the week! 

    For a smooth queso recipe you can blend the cottage cheese in a food processor until it is smooth, I think it tastes fine not even blended.

    To serve, garnish with your choice of chopped cilantro, sliced jalapenos, sour cream, or diced avocado.

    Serve warm with tortilla chips or your favorite dippables. This dip is perfect for parties, game day gatherings, or as a tasty snack. Enjoy your homemade Taco Queso Dip and watch it disappear before your eyes!

    • 1 packet of Taco seasoning, lower sodium if possible
    • 8 tablespoons of cheddar cheese
    • 2 cups of cottage cheese
    • Salt and pepper to taste
    • Optional garnishes: chopped cilantro, sliced jalapenos, sour cream, diced avocado


    Instructions
