These almonds are perfect for holiday gatherings, movie nights, road trips, or homemade food gifts. The smoker gives them an incredible depth of flavor while the cinnamon sugar coating creates that classic sweet roasted nut taste everyone loves.

    Why This Works

    • Makes a large batch for snacking all week
    • Sweet and smoky flavors pair perfectly together
    • Easy recipe with simple pantry ingredients
    • Great for parties, holidays, and gifting
    • Perfect crunchy texture
    • Works with pellet grills and smokers
    • Can be customized with different spices
    • Much more affordable than store bought candied nuts

    Ingredients for Smoked Almonds

    Ingredients needed for smoked almonds.
    • Lightly Salted Almonds - make sure to get almonds that haven't been heavily salted so that you can control the amount of salt that goes with them
    • Egg whites - The egg whites get beaten until they are frothy. This is what helps the seasonings stick to the almonds.
    • Sugar - brown or white sugar can be used, can also use maple syrup for sweetness
    • Cinnamon and vanilla for some sweet flavor

See recipe card below for a full list of ingredients and measurements.

    Substitution and Variations to Try

    • Swap with avocado oil, butter spray, or omit entirely for oil-free versions (theyโ€™ll be slightly drier).
    • Spices: Try BBQ rub, curry powder, Trader Joe's Bagel Seasoning Recipe, or even ranch mix.
    • Sweet version: Add a touch of cinnamon + maple syrup or monk fruit sweetener for a WW-friendly twist.
    • Nuts: You can use this method with cashews, pecans, or mixed nuts!

    How to Make Smoked Almonds

Step 1: Set your smoker to the smoke setting and let that run for 5 minutes before turning it to 225 degrees. If your smoker doesnโ€™t have a smoke setting then just set the temperature to 225 degrees. Fill your smoker with wood chips.

Step 2: Weigh out 16 oz of almonds on a food scale and set aside.

    Pro Tips for Smoked Almonds

    • Stir the almonds several times while smoking to prevent hot spots
    • Use parchment paper for easier cleanup
    • Let the almonds cool fully before storing so they stay crunchy
    • Apple and cherry wood pellets pair best with cinnamon sugar flavors
    • Add a pinch of cayenne pepper for a sweet and spicy version
    • Do not overcrowd the pan or the almonds may steam instead of roast

    Storage

Store smoked cinnamon sugar almonds in an airtight container at room temperature for up to 1 week.

For longer storage, keep them in the refrigerator for up to 2 weeks. Allow them to come to room temperature before serving for the best texture.

You can also freeze the almonds for up to 2 months in a freezer-safe container.
