    Why You’ll Love This Recipe

    • I'm an expert at making Air Fryer Hard Boiled Eggs. Once you have these ready you can whip up these yummy scotch eggs in no time!
    • The air fryer creates a perfect golden crust without oil splatter. Just use a little bit of cooking spray to coat the eggs. No deep frying with all that greasy oil.
    • High in protein and super satisfying, they are pretty yummy with a sriracha mayo sauce.
    • Meal prep friendly: They keep well and reheat beautifully.
    • Easy to customize: Use different meats, coatings, or egg textures.

    Ingredients You’ll Need

    • 4 large eggs (boiled): Boil to your preferred doneness — hard or soft!
    • 1 pound ground breakfast sausage: Classic pork sausage works great, or try turkey or chicken for a lighter version.
    • ½ teaspoon salt and ½ teaspoon black pepper: to taste
    • ½ cup all-purpose flour: For the dredge — helps the egg coating stick
    • 1 raw egg (beaten): Used to coat the sausage layer before breadcrumbing
    • 1 cup panko breadcrumbs: For that extra crispy exterior — use seasoned or plain
    • Olive oil spray: Helps get the bread crumbs extra crunchy in the air fryer!

How to Make Air Fryer Scotch Eggs

Step 1 Place 4 eggs in boiling water for 8–9 minutes for hard-boiled or 6–7 minutes for soft-boiled. Transfer to an ice bath and peel once cool. Like I mentioned above you can also use your air fryer to preheat eggs. Make those the day before!

Step 2 Season and prep the sausage: In a bowl, mix the sausage with salt, and pepper.

Step 3 Wrap the eggs: Divide the sausage mixture into 4 equal parts. Flatten each into a disk and carefully wrap around each boiled egg. Seal the sausage completely around the egg.

Step 4 Set up your dredging station: with Bowl 1: flour , one Bowl 2: beaten raw egg, and Bowl 3: panko breadcrumbs

Flour, egg, and bread crumbs in a bowl.

Step 5 Coat the wrapped eggs: Roll each sausage-wrapped egg in flour, then dip in egg, and coat with breadcrumbs. Lightly press to help the breadcrumbs stick.

Air fry: Preheat your air fryer to 375°F (190°C). Lightly spray the basket and eggs with olive oil spray.
