    Baked chicken, broccoli, and sweet potatoes make for a delicious and nutritious meal option. Chicken is a great source of lean protein, essential for muscle growth and repair. When baked, it can be juicy and flavorful.

    Why You Will Like This Recipe

    I've been trying to eat more healthy lately. I'm pretty terrible about that and now that the Holidays are coming up it's pretty hard to do with all the cookies and baked goods in every corner.

    There are a couple of healthy recipes I just love now and tis is one of them. I've made veggie burrito bowls a couple times and that was delicious.  Whenever I make a cookie now, I try one or 2 and freeze the rest. Then I ship them off to family or friends.

    This is a good meal you can prep at the beginning of the week. The chicken and broccoli get baked on one pan and the sweet potatoes get baked on another pan. They take longer to cook. Sweet potatoes and broccoli roasted in the oven is now my favorite way to eat my veggies. I seasoned the chicken with Mrs. Dash chicken seasoning and then divided everything up into my handy Reynold's heat and eat containers that I now love.

    Ingredients Needed

    • Sweet potatoes - Incorporating sweet potatoes into your meals can be a delicious and nutritious way to enhance your diet. Whether you enjoy them as fries, in a stew, or as a side dish, sweet potatoes offer a range of health benefits and can add a sweet and savory element to your culinary creations.
    • Broccoli
    • Medium-sized chicken breasts
    • Olive oil - Look for olive oils that are labeled as extra virgin, cold-pressed, and unfiltered for the highest quality.
    • salt and pepper - to taste

    How to Make Baked Chicken Broccoli and Sweet Potatoes

    Step 1 Cut the broccoli into bite size pieces and spread them on half of the baking sheet. Cut the chicken into bite size pieces and season with whatever seasoning you wish. Drizzle the broccoli and chicken with olive oil.

    Step 2 On another pan, place the cubed sweet potatoes and drizzle with olive oil and sprinkle with salt.

    Step 3 Bake at 425 for 12 to 15 minutes and take out the chicken and broccoli. Leave the sweet potatoes in for another 15 minutes.

    Step 4 Divide the chicken, broccoli, and sweet potatoes evenly into 4 servings. Serving size is ¼th of the pan.

      What if I wanted to substitute Brussels sprouts for the broccoli - will this change cooking time? Or am I better off sticking with the original recipe?

      Five days is ok in the fridge all week for these meals? Or do you put them in the freezer?

      I feel the same as I wasn't eating healthy the past few months. My friends saw how terrible my food choices were. More on instant noodles and canned goods. They really encouraged me to cook my own food. Actually, it was challenging at first because I am not used to it. For now, I am looking for a recipe which is easy to prepare. I can't wait for this baked chicken broccoli and sweet potatoes.
