    Honey Roasted Pork Tenderloin with Carrots‏ and Potatoes is the ultimate Fall meal served with carrots.

    I've been rediscovering old recipes on my blog and going back way into the older archives from 2010 to 2013. Some of these recipes don't even have a picture to go with them so I've been updating them for you and adding the points.

    Why You Will Like This Recipe

    Pork tenderloin is something that I haven't cooked in a super long time and making this recipe really had me ooing and awing over how good this type of meat is.

    I'm so used to chicken, eggs, and ground beef, and was getting kind of bored with those protein choices. Enter in pork tenderloin. It's very versatile and heck it tastes like chicken.

    You can use it to make a really fancy meal like this. Pork tenderloin is very cheap and great for people to eat that are on a budget. This whole entire dish is made on a sheet pan and it is very easy to make and it is a very fancy meal you can make if you're wanting to impress a certain someone.

    Ingredients Needed

    • Baby carrots - contribute a subtle sweetness and a hearty texture to the dish.
      Russet potatoes - also known as Idaho potatoes, are a popular variety of potato that are widely consumed in the United States.
    • Honey - Always go for a raw honey and one that is unfiltered. Preferably locally sourced. 
      Apple juice or apple cider - When purchasing apple juice, it is important to choose a variety that is 100% juice and does not contain added sugars or preservatives.
      Dijon mustard - is known for its smooth texture and strong, pungent flavor.
      Soy sauce - Use a Low Sodium or if you don’t have that on hand go for Tamari or Coconut Amino Acids
    • Pork tenderloin is a delicious and versatile cut of meat that is great for any occasion, whether it's a family dinner or a fancy dinner party. It is a lean and tender cut of meat that can be cooked in a variety of ways, including grilling, baking, or pan-searing.
      Kosher or regular salt and Pepper to taste
      Minced fresh chives (optional)

    How to make Pork Tenderloin with Roasted Carrots

    Step 1: Preheat your oven to 425 degrees.

    Step 2: Take out a sheet pan and place the pork tenderloin on one side.

    Pork, carrots, and potatoes on a sheet pan.

    Step 3: Cut and cube the potatoes so they are all an even thickness. This will help with the cooking time. Place the potatoes a long with the carrots on the other side of the sheet pan. You can use some tinfoil to separate out the veggies from the meat if you desire.

    Glaze for pork tenderloin.

    Step 4: To make the glaze whisk together the honey, apple cider vinegar, soy sauce, and mustard into a bowl.

    Step 5: Pour the glaze over the pork tenderloin and vegetables in a pan. Toss the vegetables with a set of tongs so that all the veggies are coated.

    Place the sheet pan into the oven and bake for 22 to 25 minutes or until the potatoes are done.

    Air Fryer Instructions

    Simply follow the steps as written below but place all the ingredients (carrots, potatoes, and pork loin) in your air fryer basket. I'd recommend using one of those air fryer liners to place on the bottom because of the glaze.

    Pour the glaze over the top of everything in the basket and cook for 18 to 20 minutes at 400 degrees.

    Tips for Pork Tenderloins with Carrots and Potatoes

    Please check the size of your pork tenderloin before cooking it in the oven. The time and temperature will vary depending on how much the pork tenderloin weighs. For 1 pound of pork tenderloin, it can take anywhere from 20 to 35 minutes in the oven. If the pork tenderloin weighs more adjust the cooking time so that it's longer.

    The National Pork Board recommends cooking pork chops, roasts, and tenderloin to an internal temperature between 145° F.

    Pork Tenderloin lasts in the fridge for 1 to 2 days. It can be left in the freezer for 6 to 8 months. This recipe can easily be meal prepped and stored in the fridge in glass meal prep containers.

    For Freezer: Cool your pork to 40 degrees before wrapping it up in plastic wrap to store in the freezer. Store pieces of cooked meat in air tight.

    Ingredients

    ¾  pound  baby carrots
    2 medium sized russet potatoes 

    ¼  cup  honey
    3  tablespoons  apple juice 
     2  teaspoons  Dijon mustard
     1  teaspoon  soy sauce1 

    (1 ¼-pound) pork tenderloin, trimmed
    ¼  teaspoon  kosher or regular salt
    ¼  teaspoon  pepper
    2  tablespoons  minced fresh chives (optional)


    Instructions

    6. Disclaimer: the recipe instructions are for a 1 pound pork tenderloin. If you have a larger pork tenderloin it WILL take longer than the required time recommended. You will need to adjust the time if it's more.

      Flavors were great and pork was VERY juicy. Kids and hubby loved it. I added some garlic powder to the veggies, and sliced onion around the pork. Based on other comments about veggies not being cooked, I used baby potatoes cut in half, and I still had to wait another 15 minutes for them to be done. Will definitely make again but will put veggies in first and add pork after 15 minutes.

      If you had to cook your pork tenderloin for more than hour, you had a larger pork tenderloin than what the recipe stated. So of course, it will take longer per pound.

      You will have to adjust the time depending on the size of your pork loin. Cooking times for 1 pound of pork tenderloin is 20 to 27 minutes. If you look up cooking instructions for pork tenderloin, the time recommended is pretty accurate for a 1 pound pork tenderloin. I'm not sure what size of pork rob or you both had, so it's hard to say.

      I agree with ROB, nothing was quite done ☹ good $labor, but needed longer in the oven.

      Just tried this recipe, it has good flavor, the only problem i had was the potatoes being done in the pan. After about an hour in the oven ...I had to switch to a skillet in order to get the potatoes done and even then the carrots were not completely done. I will try again but change up how it is cooked. Flavors are great the instructions need to altered.
