    🛒 Ingredients Needed for Pineapple Upside Down Pancakes

    • 1 ½ cups pancake mix (any boxed mix or your favorite homemade recipe)
    • 1 cup water or milk (dairy-free if needed)
    • 1 egg
    • 1 teaspoon vanilla extract
    • ½ teaspoon cinnamon (optional)
    • 1 can pineapple slices (drained and patted dry)
    • ¼ cup brown sugar
    • 2 tablespoon butter or vegan butter
    • Maraschino cherries (optional but cute!)
    • Cooking spray or Blackstone oil

    Substitution Tips:

    • Use fresh pineapple chunks or rings if you have them!
    • Want it WW-friendly? Use Kodiak Cakes mix + spray butter + light brown sugar.
    • Use Kodiak Cakes mix and water - will add more protein

    🔥 How to Make Pineapple Upside Down Pancakes on a Blackstone Griddle

    Preheat your Blackstone griddle to medium-low heat.

    Step 1 In a bowl, mix the pancake batter: pancake mix, water (or milk), egg, vanilla, and cinnamon.

    Step 2 Lightly oil the griddle and melt butter in small rounds (where you’ll place the pineapple). Add a pineapple slice (or chunks) to the melted butter and sprinkle with a bit of brown sugar. (Optional) Place a cherry in the center of each ring 🍒
