This s’mores quesadilla is a fun twist that’s perfect for dessert or a sweet snack after dinner. It’s quick, low-effort, and great for both kids and adults.

    And let’s be honest: anything involving melty chocolate and marshmallows is a guaranteed win. I'm a huge fan of s'mores too. You should try these S'more Bombs or Golden Graham S'mores Bars.

    Ingredients Needed

    Ingredients Needed for Smore Quesadilla.
    • 2 small flour tortillas (6–8 inches)
    • ¼ cup chocolate chips - Nutella or chocolate spread can replace chocolate chips for faster melting.
    • ¼ cup mini marshmallows (or 2 large ones, torn) - marshmallow fluff or creme can also be used
    • 1–2 graham crackers, crushed - any type of crushed cinnamon cookie
    • Butter or nonstick spray for griddle
    • Optional toppings: peanut butter drizzle, caramel sauce, whipped cream

    Substitution Tips

    • Gluten-free tortillas and graham crackers work great if needed.
    • Want extra crunch? Add chopped nuts or a sprinkle of cinnamon sugar on the outside before griddling.
    • Dairy-free? Use plant-based chocolate and marshmallows.
    • For a WW or lightened up version use low-carb or low-calorie flour tortillas (like Mission Carb Balance, ~45–70 cal each), Lily’s sugar-free chocolate chips (or semi-sweet mini chips), and 8–10 mini marshmallows (about ⅛ cup)

    How to Make a S’mores Quesadilla on the Blackstone

    Step 1 Preheat your Blackstone griddle to medium-low heat. Lightly grease the surface with butter or nonstick spray or butter.

    Step 2 Assemble your quesadilla: Lay one tortilla on a plate or board. Sprinkle evenly with chocolate chips, mini marshmallows, and crushed graham crackers. Place the second tortilla on top to create a sandwich. If you're using 1 tortilla just fold it over.

    Step 3 Carefully transfer the quesadilla to the griddle using a spatula. Cook for 2–3 minutes per side, pressing lightly with your spatula to ensure the tortillas crisp up and the inside gets melty. Once golden brown and slightly gooey, remove from heat. Let cool for 1–2 minutes, then slice into wedges.
