    Pizza Quesadillas

    If you’re craving pizza but want something faster (and honestly easier), these pizza quesadillas are the perfect solution.

    They come together in minutes using simple ingredients, get perfectly crispy in a frying pan, and give you that melty, cheesy pizza flavor without turning on the oven.

    This is one of those recipes I keep coming back to because it’s quick, customizable, and always hits.

    Ever since starting Weight Watchers again, I've been making a lot of different types of quesadillas. Last week was buffalo chicken quesadillas and this week is pepperoni pizza quesadillas.  They can be very filling if you're smart and use the right ingredients. 

    If I make chicken-style quesadillas I’ll add some black bean and corn salsa and put some of that in the middle. I also like adding pico de gallo inside of them too. Pico is zero points if there's no type of oil in it.

    Why You’ll Love This Pizza Quesadilla

    From experience, this is one of those meals that’s perfect for lunch, dinner, or even a late-night snack.

    Ingredients Needed:

    Tortillas - Smart & Delicious is a tortilla brand that makes low carb, high fiber tortillas. Here’s a list of other low point tortilla options for MyWW. 

    • Ole Extreme Wellness - 1 point 
    • Flatout Light Wraps  Whole Wheat Flatbreads - 2 points 
    • Mission Carb Balance Tortillas - 2 points 
    • La Banderita Whole Wheat Carb Counter Tortillas - 1 Point 
    • Frescados - 2 points 

    Pepperoni - Turkey or regular pepperoni will work for this. If you like other pizza toppings than pepperoni, you can use that. 

    Cheese - Use a part-skim or reduced-fat cheese to keep the cheese low points.

    Substitution Tips

    • No pepperoni → use cooked sausage, ham, or veggies
    • Want it lighter → use low-fat cheese or less cheese
    • Add protein → grilled chicken works great
    • Low carb → try a low-carb tortilla

    How to make Pizza Quesadillas 

    Step 1: Heat a large skillet over medium-high heat. Spray with nonstick cooking spray. 

    Step 2: Add 1 flour tortilla to skillet and top half of the tortilla with a heavy sprinkling of both cheese and pepperoni.

    Step 3: Fold the other half of the tortilla over and cook, flipping once, until golden, 3 minutes per side. Repeat to make 4 quesadillas.

    Slice into wedges and serve with marinara sauce. 

    Pro Tips for the Best Pizza Quesadilla

    • Don’t overfill → helps it stay crispy and easier to flip
    • Cook on medium heat → prevents burning before the cheese melts
    • Press lightly with a spatula → helps everything stick together
    • Let it rest for a minute before slicing → keeps the cheese from sliding out

    Serving Suggestions

    • Serve with extra pizza sauce for dipping

    Storage & Reheating

    Best eaten fresh, but you can store leftovers in the fridge for up to 2 days.

    Reheat in a pan or air fryer to bring back the crispiness.

    How do you make pizza quesadillas in the air fryer?

    Preheat your air fryer to 375°F. Assemble the quesadilla, then air fry for 4–6 minutes, flipping halfway through, until the tortilla is crispy and the cheese is melted. Keep an eye on it so it doesn’t over-brown.

    How do you make quesadillas crispy?

    A lightly oiled pan or air fryer works best. Cook until the tortilla is golden brown and slightly firm. Pressing it gently with a spatula while cooking can also help create that crispy texture.

    Can you make pizza quesadillas ahead of time?

    Yes, you can assemble them ahead and store them in the fridge for a few hours. Cook them fresh when ready to eat for the best texture.

    Description

    A quesadilla stuffed with cheese and pepperoni. Don’t like pepperoni pizza? Make a pineapple and ham pizza, veggie pizza, or meat lovers quesadilla. Dip them in your favorite marinara sauce. 


    Ingredients

    Scale
    • 1 Low Carb High Fiber Smart & Delicious Wrap or tortilla mentioned in post above
    • 8 slices of turkey pepperoni
    • ¼ cup of part-skim mozzarella cheese
    • ¼ cup of marinara sauce (for serving)
    • Cooking Spray


    Instructions
