Well this year I’ve shared a Chicken Crust Ceasar Salad Pizza that is low carb and here’s another low carb recipe for a flat bread made with cottage cheese and just eggs! This recipe reminds me of my High Protein Cottage Cheese Pancakes, but it gets baked in the oven instead of a griddle.
It’s amazing what cottage cheese can do! I’ve been making this 4 Ingredient Taco Dip with Cottage Cheese with it, and there’s another recipe I want to try meatballs, cottage cheese, marinara sauce, and cheese. The possibilities are endless when it comes to cottage cheese!
Viral Cottage Cheese Flat Bread Variations
Pizza: Top this flatbread crust with marinara sauce, cooked ground beef, cheese, and all your favorite pizza toppings!
Sandwiches or Wraps: Add your favorite sandwich toppings, lettuce, mayo,cheese, and sauce to make and fold it into a wrap.
Buns: Cottage cheese flat bread can be used as a wrap, buns for burgers, turned into steak sandwiches, or wrap a hot dog in it.
Cottage Cheese Flatbread in Air Fryer
To make this recipe in the air fryer you will need one of those parchment liners that cover the whole air fryer. Spread the cottage cheese all over the bottom and air fry at 400 degrees for 16 minutes.

If you're allergic to eggs here's how to make it without it! Spread cottage cheese on a baking sheet to form a crust using a spoon or a knife. Sprinkle with cheese and season with salt and pepper. Bake at 30 to 40 minutes.

Step 1: Preparation: Add the cottage cheese, eggs, and flax seeds to a blender. I used a Magic bullet for this step and blend until smooth.

Step 2: Preheat Oven: Turn your oven temp on to 350 degrees.
Step 3: Spread: Spray the parchment paper with cooking spray. Then Spread the blended cottage cheese mixture onto a parchment lined work surface and spread it out evenly.

Step 4: Bake to Perfection: Bake in the oven for 35 to 40 minutes or until the flat bread has turned a golden brown color.

It sucks that it stuck to the parchment. I would definitely spray first next time you make it.

I made this and was disappointed that it wasn’t more crusty and bread like. It’s more like a crepe. Did I do anything wrong or is this the way it should be ?
