    Weight Watchers Chicken Salad with Grapes

    Chicken salad with grapes is a delicious and easy-to-make dish that is perfect for a summer lunch or dinner. To make this salad, start by cooking chicken breasts and then mix in all the other ingredients in a bowl.

    Why You Will Love This Chicken Salad

    This chicken salad is made with juicy chicken breast, grapes, apple, dried cranberries, and some almonds for some crunch. I usually make this salad during the Spring and Summer and grill up a bunch of chicken ahead of time. Sometimes I’ll even use my air fryer to cook my chicken breast.

    You can serve it in a pita bread or on a slice of bread and make open faced sandwiches. To make a zero point chicken salad omit the slivered almonds, dried cranberries, and use plain greek yogurt instead of mayo. I just prefer the taste mayo gives in chicken salad.

    Ingredients for Weight Watchers Chicken Salad

    • Chicken breasts, diced or shredded - They’re lean and quick-cooking and always come out juicy and tender. Use an instant-read thermometer to make sure that the chicken is not over cooked.  When reading labels for chicken breasts try to find ones that say Organic or Free Range. 
    • Apples are one of the most popular fruits in the world, and for good reason. Not only are they delicious, but they are also incredibly nutritious. Apples are a great source of fiber, vitamin C, and antioxidants, which can help protect your body against disease and illness.
    • Grapes -
    • Dried Cranberries - are also a good source of fiber, which can help promote healthy digestion and keep you feeling full for longer periods of time.
    • Slivered almonds - or any type of nut you prefer, pecans would be good
    • Light mayo - I use light mayo to help keep the points and calories low
    • Salt and pepper to taste
    • Garlic powder - Chopped fresh garlic can take some time to chop so I often always use the freshly minced garlic that comes already made in a jar.

    How to make Chicken Salad

    Step 1: In a bowl add the cooked chicken, apple, grapes, almonds, cranberries, salt and pepper, and garlic powder. Mix everything together and serve over lettuce or make a sandwich with it.

    Tips for Chicken Salad

    • To make chicken salad an easy lunch or weeknight dinner make sure to prep your chicken ahead of time on the weekend or the night before. If you are making a recipe that calls for chicken reserve some or cook some extra chicken breast.
    • Also, you can get shredded already cooked chicken at the Deli or any grocery stores these days. Sometimes I like to get a package of shredded chicken from Target.
    • The apples and grapes can be diced or just cut in half.
    • Nuts get pretty expensive at the grocery store. My recipe calls for just 2 tablespoons of slivered almonds and sometimes where you find other nuts such as pecans or almonds you can find tiny bags of them. You can always choose not to add in the nuts as well. Just giving you some options here.

    What can you serve with chicken salad?

    Chicken salad is a delicious and versatile dish that can be served in many ways. One popular option is to serve it on top of a bed of fresh greens, such as lettuce or spinach, for a light and refreshing salad.

    Another option is to serve it on bread as a sandwich. You can also use it as a filling for pita bread or wrap it in a tortilla for a tasty wrap.

    For a more substantial meal, you can serve chicken salad with crackers or sliced vegetables, such as carrots and celery.

    Additionally, you can add fruit, nuts, or cheese to the salad for some extra flavor and texture. Overall, the possibilities are endless when it comes to serving chicken salad.

    How to store leftovers?

    Always store leftovers in clean, food-grade containers. The type of container doesn’t really matter. Use zip lock, glass, plastic,  whatever!  Make sure to store any leftovers in an airtight container.

    • ⅓ cup of light mayo
    • salt and pepper to taste
    • ½ teaspoon of garlic powder

    Instructions
