    Turkey, Corn, and Black Bean Chili

    Chili with ground turkey, corn, and black beans is a hearty and flavorful dish that is perfect for cold weather. The ground turkey adds a lean protein source while the corn and black beans provide a satisfying texture and additional nutrients.

    This recipe is also perfect for those who are on Weight Watchers because it has a lot of zero point ingredients.

    Why You Will Love This Recipe

    This Turkey, Corn, and Black Bean chili is simply divine. I like to play around with the spices in my chili. Usually, it's a combo of 2 tablespoons of chili powder, 1 teaspoon of cumin, and some cayenne pepper or crushed red pepper flakes.

    The addition of canned chipotle peppers in this is wonderful and I will be adding some every time I make chili now! Top this with some reduced fat cheddar cheese, sour cream or cilantro. That would be additional points of course, one serving of this chili is only 5 points.

    Ingredients Needed

    Ingredients needed for Turkey and Corn Chili with Black Beans.
    • Ground turkey (99% fat-free) - Can sub 93% lean ground beef
    • Canned black beans are a convenient and versatile ingredient that can be used in a variety of dishes. They are a great source of protein and fiber, and can be added to salads, soups, stews, and even dips.
    • "Canned corn" refers to corn that has been harvested, cooked, and preserved in a can. It is a popular food item due to its convenience and long shelf life. However, some people prefer fresh or frozen corn for its taste and texture.Chili powder
    • Salt and Ground black pepper to taste
    • Diced tomatoes - When purchasing canned diced tomatoes, it is important to read the label and choose a product with no added salt or sugar if you are looking for a healthier option.
    • Chipotle chiles, canned in adobo sauce, chopped
    • Fat free cheddar - Reduced-Fat Cheese has a lower calorie count and less saturated fat than regular cheese, but it may also have a different taste and texture. It also helps with keeping the calorie count pretty low for this recipe.

    How to Make Turkey, Corn, and Black Bean Chili

    Step 1: Heat a dutch oven over medium-high heat. Coat pan with cooking spray. Add turkey; cook 8 minutes or until browned, stirring to crumble.

    Step 2: Stir in corn and black beans; cook 2 minutes. Stir in ¼ cup water and next 5 ingredients stirring until thick. ladle chili into bowls; top with ciilantro and green onions if desired.

    Recipe Tip: At this point, you can transfer the chili to a slow cooker to keep it warm during the day. Keep it on Low.

    What can you serve with chili?

    There are several options for toppings that you can serve with chili. Some popular choices include cornbread, rice, tortilla chips, sour cream, shredded cheese, jalapenos, avocado, and chopped cilantro.

    You could also serve it with a side salad or some roasted vegetables. Ultimately, the best choice will depend on your personal preferences and the occasion.

    Can this chili be made in the crock pot?

    Yes it can. Ground the ground turkey in a skillet and drain any fat. Then add that and all the rest of the ingredients to a slow cooker. Cook on low for 6 to 8 hours.

    How do I store leftovers? 

    Always store leftovers in clean, food-grade containers. The type of container doesn’t really matter. Use zip lock, glass, plastic,  whatever!  Make sure to store any leftovers in an airtight container.

    Ingredients

    • ¼ cup water

    • 1 28 ounce can low sodium diced tomatoes (I used crushed)
    • 2 chipotle chiles, canned in adobo sauce, chopped
    • ¼ cup of fat free cheddar (optional)

      I made this and it was WONDERFUL!! However, when I "created" this dish in my WW app, it shows that it a 6 point dish!! Eek! That's a big difference. Any ideas why there is such a discrepency in points?

      Yes, Cook ground turkey in a skillet until done and then add everything to a crockpot and cook on low for 6 to 8 hours.
