    Weight Watcher Chocolate Muffins

    If you're like many people, you love chocolate but also want to eat healthily. Luckily, there's a solution: healthy chocolate muffins! These muffins are a delicious, chocolatey treat that won't ruin your healthy eating habits. Here are some tips for making them.

    Why You Will Like This Recipe

    Don't you just love recipes that only have 3 ingredients in them? You most likely have these in your house too. The ingredients are bananas, peanut butter, and cocoa powder. That's it! Mix them in a bowl and divide them into 6 equal cupcakes. The easiest muffins you'll ever make and they are pretty fudgy, almost like brownies. Did I mention they are gluten free also?

    Ingredients Needed Weight Watcher Chocolate Muffins

    • Bananas
    • Creamy Unsweetened Peanut Butter
    • Unsweetened Cocoa
    • Chocolate chips optionals

    How to Make Weight Watcher Chocolate Muffins

    Step 1 Preheat oven to 350F

    Step 2 Use a hand mixer or food processor to combine all of the ingredients (except for your optional mix-ins) until well blended.  The batter should be smooth with no lumps. Fold in a handful of chocolate chips or walnuts with a spatula. 

    Recipe Tip: Mash ripe bananas with a fork if you don't have a food processor.

    Step 3 Use an ice cream scoop or spoon to fill 6 cupcake liners evenly to the top. These muffins will not rise like regular muffins, so don’t worry about filling them too high.

    Step 4 Bake for approximately 15 minutes. Let cool, and enjoy.  Serving Size: 1 muffin 

    Tips for Making Muffins

    Muffins are delicious and easy-to-make baked good that can be enjoyed for breakfast, as a snack, or even as a dessert. Here are some tips for making perfect muffins:

    1. Use the right ingredients: When making muffins, it's important to use the correct ingredients to ensure that they turn out just right. Use all-purpose flour, baking powder, salt, sugar, eggs, milk, and vegetable oil or melted butter for basic muffins. You can also add in other ingredients such as fruits, nuts, chocolate chips, or spices to give your muffins more flavor and texture.
    2. Don't overmix the batter: Overmixing the muffin batter can make the muffins tough and dense. Mix the dry ingredients together in one bowl and the wet ingredients in another bowl, then combine the two mixtures with a few quick stirs. It's okay if there are still some lumps in the batter.
    3. Use muffin liners or grease the muffin tin: To prevent the muffins from sticking to the pan, use muffin liners or grease the muffin tin with cooking spray or butter.
    4. Don't overfill the muffin cups: Fill each muffin cup about two-thirds full with batter. If you fill them too full, the muffins will overflow and become misshapen.

    How do I store leftovers? 

    Always store leftovers in clean, food-grade containers. The type of container doesn’t really matter. Use zip lock, glass, plastic,  whatever!  Make sure to store any leftovers in an airtight container. 

    How do I calculate Nutrition and WW points? 

    WW points are calculated using the recipe builder and not the nutrition info calculator. The nutrition calculator doesn’t calculate 0 point foods correctly. 

    I use the Myfitnesspal app to figure out nutrition info. Please note that I am not a certified nutritionist and I do my BEST to provide the information.
