    Shrimp scampi sounds like something you would order at a restaurant, but it is actually very simple once you break it down. You are basically cooking shrimp in a garlic butter sauce with a little lemon and serving it over pasta or with bread.

    I have made this a few times now, and what stands out is how reliable it is. As long as you do not overcook the shrimp, it turns out every time. It is also one of those recipes where simple ingredients really shine, so you do not need anything complicated.

    Ingredients Needed for Shrimp Scampi

    • Kosher salt and Freshly ground black pepper to taste
    • Linguine
    • Unsalted butter - is the most commonly used type of butter in baking, as it allows for more control over the amount of salt in the recipe.
    • Olive oil - Look for olive oils that are labeled as extra virgin, cold-pressed, and unfiltered for the highest quality.
    • Minced garlic (4 cloves) - Chopped fresh garlic can take some time to chop so I often always use the freshly minced garlic that comes already made in a jar.
    • Large shrimp (about 16 shrimp), peeled and deveined
    • Fresh parsley leaves - for garnish
    • Lemon, zest grated - This adds a nice burst of citrus flavor to the marinade to help enhance the choice of protein. Use freshly squeezed over bottled juice.
    • Squeezed lemon juice (2 lemons)
    • Lemon wedges for serving
    • Red pepper flakes - are small pieces of dried hot peppers, typically made from cayenne, that are crushed or ground into small flakes.

    How to Make Shrimp Scampi

    Step 1: Drizzle some oil in a large pot of boiling salted water, add 1 tablespoon of salt and the linguine, and cook for 7 to 10 minutes, or according to the directions on the package.

    Step 2: Meanwhile, in another large (12-inch), heavy-bottomed pan, melt the butter and olive oil over medium-low heat. Add the garlic. Saute for 1 minute. Be careful, the garlic burns easily!

    Step 3: Add the shrimp, 1 ยฝ teaspoons of salt, and the pepper and saute until the shrimp have just turned pink, about 5 minutes, stirring often. Remove from the heat, add the parsley, lemon zest, lemon juice, lemon slices, and red pepper flakes. Toss to combine.

    Step 4: When the pasta is done, drain the cooked linguine and then put it back in the pot. Immediately add the shrimp and sauce, toss well, and serve.
