Peanut Butter Corn Flake Bars are a delightful and easy-to-make dessert that will satisfy any sweet tooth. These bars are the perfect combination of crunchy corn flakes, sweet marshmallows, and creamy peanut butter. They are a great treat for any occasion, whether you are hosting a party, need a quick snack, or just want something to satisfy your craving for sweets.

No Bake Peanut Butter Cornflake Bars

Treats that don’t have to be baked in the oven are the best kind of treats in my opinion. No-Bake treats are perfect to make all year long.  If you’ve ever had a Scotcheroo bar these Cornflake bars are pretty similar but use Corn Flakes instead of Rice Krispies cereal. The prep is super easy and can be done in the microwave or on a stovetop!

I combined the sugar and syrup with peanut butter together in a  microwave safe bowl and let the microwave cook for  1 min and 30 seconds. The sugars just need to dissolve with the peanut butter.  Otherwise, you can follow the stove top instructions in the recipe below.

Why You Will Love This Recipe

One of the best things about Peanut Butter Corn Flake Bars is that they are so versatile. You can add different ingredients to the recipe to make it your own.

For example, you can add chocolate chips, nuts, or dried fruit to the mixture to give it more flavor and texture. You can also experiment with different types of peanut butter, such as crunchy or smooth, to see which one you prefer.

Another great thing about Peanut Butter Corn Flake Bars is that they are easy to customize to your dietary needs. If you are vegan, you can use vegan marshmallows and plant-based butter to make the bars.

If you are gluten-free, you can use gluten-free corn flakes instead of regular ones. You can also use natural peanut butter instead of the traditional processed kind, which is healthier and has a more intense flavor.

    Ingredients Needed

    Ingredients needed for cornflake bars.
    • Cornflakes   -  Make sure the corn flakes are crushed before stirring them into the sugar and peanut butter mixture. Otherwise they become hard to stir.
    • Peanut Butter   - Use crunchy or smooth peanut butter. I have not tried this with any other nut butters yet or PB2.
    • Corn Syrup and Sugar  - I have not tested this recipe using other sugar substitutes…
    • Chocolate Chips  -  Milk Chocolate tastes best for the topping. Melt them in the microwave.
    • See the recipe card below for a full list of ingredients and measurements.

How to Make Peanut Butter Corn Flake Bars

Step 1: Heat peanut butter, sugar and corn syrup over low heat to melt. Stir in cereal.

Cornflake cereal mixed with peanut butter, sugar, and corn syrup.

Step 2: Pat into a 8×8 lightly greased pan. (I line my pan with foil and then lightly spray it. When it is time to cut them, the foil lifts right out.).

Cornflake peanut butter bars pressed into clear pan.

Step 2: Melt chocolate chips over low heat or in the microwave and spread over top. Cool until firm.

Melted chocolate chips poured over cornflake bars.

Cut into 12 equal size bars. Serving size: 1 bar.

They are a bit on the crumbly side.

Looked good but when I made them…. According to recipe, they’re falling apart and they’re very soft even after putting them in the fridge… help please or is there something else I can do with them?
