    Nothing hits the spot like a perfectly golden, melty grilled cheese—and when you make it on a Blackstone griddle, you take things to the next level. Sometimes I will even make it with ham in the middle. This crispy, buttery classic gets that irresistible diner-style crust, and it’s ready in minutes.

    Whether you’re cooking for picky kids, whipping up lunch, or pairing it with tomato soup, Blackstone Grilled Cheese is a comfort food win every time.

    As a food blogger who’s flipped her fair share of sandwiches on the Blackstone, I can confidently say this grilled cheese is a game-changer. The flat top gives the bread a perfectly even toast while melting the cheese just right. No soggy bottoms or burnt edges here—just golden, buttery deliciousness. Plus, it’s customizable for every cheese lover’s dream.

    I like to make some Instant Pot French Onion Soup or Air Fryer Tomato Soup to serve on the side.

    Ingredients needed for Blackstone Grilled Cheese

    • 8 slices of bread
    • 8 American Cheese Slices, singles
    • 1 cup of mild chedddar cheese
    • 4 tablespoons of butter
    • 1 loaf of good crusty bread

    Substitutions

    Here are some WW friendly swaps to try

    • Light butter spread (like Land O’Lakes light) – 1–2 Points per tbsp
    • Reduced-fat cheese – 1–2 Points per slice
    • Low-calorie bread (like 45-calorie slices) – 1 Point per slice
    • Plain nonfat Greek yogurt on the side instead of chips or mayo-based sides

    How to Make Blackstone Grilled Cheese

    Step 1 Preheat your griddle to medium heat. While it’s heating up, spread a generous layer of butter on one side of each slice of bread.

    Step 2 Place one slice of bread, buttered side down, on the griddle. Quickly add your cheese slices on top of the bread, ensuring they cover the bread evenly. If you're adding any extra fillings, layer them on top of the cheese. Finally, place the second slice of bread on top, buttered side up.

    Step 3 Cook the sandwich for about 2-3 minutes on each side, or until the bread is golden brown and the cheese is melted. Use a spatula to gently press down on the sandwich while it cooks to help the cheese melt evenly. Once both sides are perfectly toasted and the cheese is gooey, remove the sandwich from the griddle. Let it cool for a minute before slicing it in half and serving. Enjoy your delicious, homemade griddle grilled cheese!

    Serving Suggestions for Grilled Cheese

    Always store leftovers in clean, food-grade containers. The type of container doesn’t really matter. Use zip lock, glass, plastic,  whatever!  Make sure to store any leftovers in an airtight container.

    The Blackstone griddle is perfect for grilled cheese. The flat, evenly heated surface gives you a golden, crisp crust while melting the cheese evenly inside. You can even make several sandwiches at once—great for families or parties.

    What’s the best cheese for grilled cheese on the griddle?

    Classic American cheese melts very nice, but you can also use cheddar, Swiss, mozzarella, provolone, or even a blend of cheeses. For extra flavor, mix and match—cheddar + mozzarella or pepper jack + Swiss are delicious combos.

    Can I use mayo instead of butter for grilled cheese?

    Depends on your preference. Some people prefer spreading a thin layer of mayonnaise on the outside of the bread instead of butter—it gives a rich, tangy flavor and a beautifully browned crust. Light mayo works too for a WW-friendly version.

    Description

    Cooking grilled cheese on a Blackstone is simple and easy just like cooking Steak on a grill. It takes no time at all and you can cook your protein of choice next to it. 


    Ingredients

    8 slices of bread

    8 American Cheese Slices, singles

    1 cup of mild chedddar cheese

    Notes

    • If the shredded cheese starts to escape from the sandwich and gets stuck on the grill or outside of the bread, just keep on cooking it on the griddle. The cheese will get nice and crusty stuck to the bread!
    • Make a garlic butter to spread over the bread instead of regular butter.
    • Try and test out a variety of different cheeses, there are endless amounts of cheeses in the supermarket today.
