    Ingredients Needed Chicken and Stuffing Casserole

    • 1 ½ cups low sodium chicken broth - The best type of stock to use is one that is homemade. For canned stock, I look for ones that say reduced sodium or fat free.
    • 1 box of Stove Top Stuffing Mix - what a fun recipe to make with a box of stove top stuffing mix!
    • 3 cups of shredded rotisserie chicken - is a versatile ingredient that can be used in a variety of dishes such as tacos, burritos, salads, sandwiches, and soups. It is a great way to add protein to your meals and can be prepared easily at home.
    • 1 can of Cream of Chicken Soup - I always keep a few cans of this in my pantry for casserole recipes
    • 8 oz sour cream - if you forgot the sour cream at the store just use more cream of chicken soup
    • 1 teaspoon of herbs de Provence or poultry seasoning - or your favorite seasoning
    • 1 can of Green Beans
    • 8 oz Shredded Cheese - I like to use Reduced-Fat Cheese because it has a lower calorie count and less saturated fat than regular cheese, but it may also have a different taste and texture. It also helps with keeping the calorie count pretty low for this recipe.
    • 4 tablespoons of unsalted butter - is the most commonly used type of butter in baking, as it allows for more control over the amount of salt in the recipe.

    How to Make Chicken and Stuffing Casserole

    In a bowl, mix together one box of stuffing mix with 1 ½ cups low sodium broth. Set aside.

    In a 9X13 in baking dish , mix together 3 cups of cooked shredded chicken, 1 can of cream of chicken soup, and 8 oz sour cream. Season with herbs de Provence. Mix well and then add 2 cans of drained green beans.

    Top with 8 of shredded cheese. Spread stuffing mixture on top and 4 tablespoons of butter on top. Bake at 30-35 minutes or until the stuffing is browned and a little crispy on top.
