Eggs and Greek yogurt are 0 points on Weight Watchers and you can make this egg salad very low in points and flavorful by using fresh herbs and whatever spices you have in your pantry. This Egg Salad is also very Carnivore friendly. I chose to use dill because that just pairs well with greek yogurt and some chives. There are few different kinds of low point bread options out there. My favorite is Village Hearth Light Italian bread and I also like to use Joseph's pita bread.

If you are also on Carnivore diet you can make this easy Carnivore mayonnaise instead of Greek Yogurt and serve it on this Carnivore Bread.

    Why You’ll Love This Recipe

As someone who’s tried just about every version of egg salad under the sun, this carnivore-friendly spin is surprisingly rich and comforting. Especially if you're using my Air Fryer Hard Boiled Egg recipe and recipe for Carnivore Mayonnaise.

Made with hard-boiled eggs, creamy yolks, and a touch of tangy mayo or egg-based fat, it’s the kind of dish that feels indulgent but keeps you on track. I’ve made this after workouts, during busy workdays, and even as a quick dinner. It’s endlessly adaptable and incredibly satisfying.

    Ingredients Needed

    Ingredients needed for Egg Salad.

    6 large hard-boiled eggs

2 tablespoons homemade or carnivore-friendly mayonnaise (or use bacon fat or beef tallow for zero-carb).

1 teaspoon Dijon mustard (optional if you include trace spices)

See the recipe card below for a full list of ingredients and measurements.

    Substitution Tips

    • Mayo: For a zero-carb option, swap in bacon fat, beef tallow, or whipped butter.
    • Mustard: Some carnivores omit all spices; if you're okay with trace amounts, Dijon adds a zippy flavor.
    • Add-ins: Add chopped bacon, shredded chicken, or even salmon flakes for variety.
    • Dairy: If you tolerate dairy, a dollop of sour cream or shredded cheese can change the texture and flavor.

How to Make Carnivore Egg Salad

Step 1: Make some hard-boiled eggs with whatever cooking method you like. For my air fryer method, I set the temp to 250 and cooked them for 16 minutes. Then I put them in an ice water bath to stop the cooking.

Peel and chop the hard-boiled eggs that you made in your air fryer. Air Fryer Hard Boiled Eggs

Add mayo (or your preferred fat) and mix until smooth and creamy. If you're not on a strict carnivore diet you can add some green onions or seasoning

Season with salt (and mustard if using).

Serve chilled or at room temperature—it’s delicious either way.

    Serving Size: ¼ cup

    Serving Suggestions

    • Spoon into halved hard-boiled egg whites for a deviled egg twist.
    • Serve with seared steak or chicken thighs for a high-protein plate.
    • Enjoy straight from the bowl with a fork—zero carbs, maximum flavor.

    Recipe FAQs

What can I serve with egg salad?

Serving egg salad on toast is a classic option that adds a bit of crunch to the dish. You can use any type of bread you like, from white to whole wheat to sourdough.

    How to store leftovers?

Keep the leftover egg salad stored in an airtight container in the refrigerator. Or wrap the egg salad tightly in a bowl and store it in the fridge.
