Low carb bread that actually tastes good?! Are you insane? Why yes, I am insane. This bread is made with ground up almonds. That means someone spent a lot of time processing almonds into flour for you, so you could still enjoy bread on a low carb diet. Does that make you happy? Yes, it does for me. I’m sorry if you’re allergic to nuts. 🙁
I have had this bag of almond flour sitting in my pantry for quite some time. I had got it the last time I had made a trip to Trader Joe’s. I want to start the low carb diet and stumbled across this recipe located here. Her website is very inspiring for weight loss and low carb eating. I changed up the recipe a bit. The batter was kind of dry and I added in a 1/2 cup of heavy cream. This bread isn’t very point friendly if you’re following Weight Watchers. It has 8 points per slice, Smartpoints that is. If you are on the low carb diet though, you are going to love this bread.
Ok, guys. I am bound and determined to lose 20 pounds, and do you know how I’m going to accomplish that? By watching my points and eating as low in carbs as possible. One thing I like about the low carb diet is that two of my favorite baking ingredients are low carb. That’s right, butter and heavy cream are low carb. Sugar is evil. I do not like sugar subsitutes when baking so maybe I can try and figure out savory baked goods instead? Who’s going to follow this diet with me?!
- ½ cup unsalted butter, melted
- 5 large eggs at room temperature
- 1 teaspoon baking soda
- 2 cups almond flour (I used Trader Joe's almond meal)
- ¼ cup of heavy cream
- 1 tsp salt
- In a large bowl mix together the melted butter, almond meal, eggs, baking soda, and heavy cream until smooth. Bake for 35 minutes at 350 degrees in a bread loaf pan.
