    This Weight Watchers Tortellini Soup with Italian Sausage and Spinach is a cozy, flavorful soup that's perfect for a chilly evening. It combines savory Italian sausage, tender cheese tortellini, fresh spinach, tomatoes, and Italian seasonings in a delicious broth.

    The soup is hearty enough to serve as a complete meal, but it doesn't feel as heavy as a traditional creamy tortellini soup. Using lean Italian sausage and plenty of vegetables makes this an easy way to enjoy a comforting bowl of pasta soup.

    Cooking everything in one pot also makes this recipe especially convenient. As the sausage cooks, it flavors the broth, while the tortellini absorbs some of those delicious Italian flavors.

    For a lighter version, use lean Italian sausage and choose a lower-sodium chicken broth. You can also add extra spinach or other vegetables to make the soup even more filling.

    Ingredients Needed

    • Olive oil - Look for olive oils that are labeled as extra virgin, cold-pressed, and unfiltered for the highest quality.
    • Turkey Sausage - can also try this with ground turkey, ground beef, or ground chicken 
    • Diced onion - provide a sweet and savory flavor to the dish, while also helping to build the foundation of the dish with its aroma and ability to caramelize.
    • Minced garlic - Chopped fresh garlic can take some time to chop so I often always use the freshly minced garlic that comes already made in a jar. 
    • Crushed tomatoes - When purchasing canned diced tomatoes, it is important to read the label and choose a product with no added salt or sugar if you are looking for a healthier option.
    • Vegetable broth - The best type of stock to use is one that is homemade. For canned stock, I look for ones that say reduced sodium or fat free.
    • Fresh chopped basil
    • Salt and Pepper to taste
    • Refrigerated tortellini such as Buitoni Tortellini, Three Cheese
    • Packed fresh baby spinach

    How to Make Tortellini Soup (Step By Step)

    Step 1: In a large soup pot or dutch oven, Heat olive oil and add the chopped onion. Cook the onions until they are soft.

    Step 2: Add the Italian Sausage, and cook until sausage is no longer pink.

    Step 3: Stir in crushed tomatoes, garlic, vegetable (or chicken) broth, basil, salt and pepper. Bring to a boil, reduce heat to low, and cover. Let soup simmer for 20-30 minutes.

    Step 4: Add tortellini and spinach and simmer for about ten minutes, until pasta is tender.

    Makes 8 servings. Serving size: 1 cup.

    Pro Tips for Tortellini Soup

    Don't overcook the tortellini. It can become soft and break apart if it stays in the hot broth too long.

    Add the spinach at the very end. It only needs a minute or two to wilt, and this keeps it bright and fresh.

    For extra vegetables, add chopped zucchini, carrots, mushrooms, or bell peppers.

    If you prefer a spicier soup, use hot Italian sausage and add a little extra red pepper flakes.

    Freshly grated Parmesan melts beautifully over the hot soup and adds plenty of flavor.

    If you are following Weight Watchers, use the specific ingredients and brands that fit your current plan and calculate points based on the products you use.

    Storage

    Allow leftover soup to cool before transferring it to an airtight container. Store it in the refrigerator for up to 3 to 4 days.

    Keep in mind that the tortellini will continue absorbing broth as the soup sits. The leftovers may therefore be thicker than the freshly made soup.

    When reheating, add a splash of chicken broth or water if needed. Warm gently on the stovetop or in the microwave until heated through.

    Serving Suggestions

    Serve this tortellini soup with a simple green salad for an easy dinner. A piece of crusty Italian bread is also delicious for soaking up the flavorful broth.

    For extra vegetables, serve the soup with roasted broccoli, green beans, or a simple side salad.

    You can also top each bowl with Parmesan, freshly cracked black pepper, and a few red pepper flakes.

    Ingredients

    • 1 tablespoon olive oil
    • 1 pound ground hot Turkey Sausage or regular Turkey Sausage
    • ½ cup diced onion (about ½ medium sized onion)
    • 1 tablespoon minced garlic
    • 1-28 oz can crushed tomatoes
    • 1-32. oz. box of vegetable broth (chicken works too)
    • 2 tablespoons fresh chopped basil
    • 1 teaspoon salt
    • ½ teaspoon pepper
    • 1 9-ounce package refrigerated tortellini such as Buitoni Tortellini, Three Cheese
    • 2 cups packed fresh spinach

    Instructions

      Best soup ever, one of our favorites! We use Italian green beans instead of spinach. Top with fresh grated parmesan chees and French bread and butter. Yummmmm!!!
