    If you are looking for an easy, comforting dinner that comes together with simple ingredients, bubble-up pizza is a must-try. This recipe takes classic pizza flavors and turns them into a baked casserole that is hearty, cheesy, and perfect for busy nights. Instead of rolling out dough, you cut biscuit dough into pieces and let it โ€œbubble upโ€ as it bakes, creating a soft, fluffy texture throughout the dish. This is also very Weight Watcher friendly!

    This is one of those recipes that is great for feeding a family or making ahead for leftovers. It is also very customizable, so you can use whatever toppings you already have on hand. If you love pizza but want something a little different and just as easy, this recipe is a great option.

    You guys liked the bubble up enchiladas so much, that I decided to try the bubble up pizza version of it. I've seen it pinned so many times now, that the enchilada version has become my most popular post on my blog. Yay, thank you to everybody for making that post such a success!

    Ingredients Needed

    • Refrigerated buttermilk biscuits, buttermilk - The base of the recipe. When cut into pieces, the dough bakes up soft and fluffy, creating that โ€œbubble upโ€ texture.
    • 96% lean ground beef - Adds protein and flavor. You can use pepperoni, cooked ground beef, sausage, or even leftover ham.
    • Onion powder, or 1 onion, chopped
    • Tomato sauce -Adds classic pizza flavor. You only need enough to coat the dough pieces without making the dish too wet.
    • Garlic, minced -  Chopped fresh garlic can take some time to chop so I often always use the freshly minced garlic that comes already made in a jar. 
    • Italian seasoning - Is a popular blend of herbs and spices that typically includes a mix of dried basil, oregano, rosemary, thyme, and sometimes garlic powder or dried red pepper flakes.
    • Pizza toppings you like, green pepper, turkey pepperoni, mushrooms, etc.
    • Mozzarella cheese, shredded - I like to use Reduced-Fat Cheese because it has a lower calorie count and less saturated fat than regular cheese, but it may also have a different taste and texture. It also helps with keeping the calorie count pretty low for this recipe.

    Substitution Tips:
    You can swap biscuit dough for canned pizza dough cut into pieces. Use any toppings you like such as bell peppers, onions, mushrooms, or olives.

    How to Make Bubble Up Pizza

    Step 1: Preheat oven to 350 F.

    Step 2: In a skillet, brown meat over medium-high heat until browned, stirring to crumble. Stir in onion powder, tomato sauce, basil, garlic and Italian seasoning.

    Step 3: Add quartered biscuits to the bottom of a greased 9X13 in pan.

    Step 4: Spoon beef mixture over the top of the quartered biscuits. Top with pepperoni and cheese. Bake for 25 minutes. Check to see if the biscuits are cooked all the way through by poking them with a tooth pick. They should come out clean. If they don't continue baking for another 5 to 10 minutes.

    Let stand 5 minutes before serving.

    Pro Tips for Bubble Up Pizza

    • Cut the dough into evenly sized pieces so it cooks evenly
    • Do not use too much sauce or the casserole may become soggy
    • Make sure the center is fully cooked before removing from the oven
    • Add extra cheese on top for a golden, bubbly finish
    • Let the dish rest for a few minutes before serving to help it set

    Storage

    Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in the oven or air fryer for best results. This helps maintain the texture better than microwaving.

    Can I make this ahead of time?

    Yes, you can assemble it ahead of time and refrigerate it until ready to bake. You may need to add a few extra minutes to the cooking time.

    Ingredients

    Scale
    • 1 pound 96% lean ground beef
    • 2 teaspoons onion powder, or 1 onion, chopped
    • 16 ounces tomato sauce
    • ยฝ teaspoon dried basil
    • 3 cloves garlic, minced
    • 1 teaspoon Italian seasoning
    • 15 ounces refrigerated buttermilk biscuits, buttermilk
    • Add whatever typical pizza toppings you like, green pepper, turkey pepperoni, mushrooms, etc.
    • 1 ยผ cups part skim milk mozzarella cheese, shredded


    Instructions

    1. Preheat oven to 350 F.
    2. In a skillet, brown meat over medium-high heat until browned, stirring to crumble. Stir in onion powder, tomato sauce, basil, garlic and Italian seasoning.
    3. Add quartered biscuits to the bottom of a greased 9X13 in pan.
    4. Spoon beef mixture over the top of the quartered biscuits. Bake for 25 minutes. After the 25 minutes are up, sprinkle with cheese; bake an additional 10 minutes or until biscuits are done.
    5. Let stand 5 minutes before serving.

      Somehow this recipe has been updated to say it's only 5 smart points- each Pillsbury Buttermilk biscuit alone is 5 smart points and if there's 15 biscuits a can and the recipe has 8 servings, there's no way a serving is is only 5 smart points. I. just wanted to give a heads up in case the consumer didn't do their own math.

      Do we have to use the lean ground beef? I think it would be good without it.. it doesn't even look like its in the picture..
