    Cookie Butter Rice Krispie Treats

    These rice krispie treats are loaded with cookie butter from Trader Joe's. If you don't have a Trader Joe's near you, you can always use Biscoff spread. You can find it at Wal-mart and it's usually by the peanut butter.

    I'm finally out of cookie butter and must stock up at Trader Joe's this weekend. Their cookie butter is so good, you can just eat it with a spoon. They also have these Speculoos (sp?) candy bars. It's cookie butter inside dark chocolate. The last of my cookie butter went into these rice crispy treats and what a great addition that was. Cookie butter and rice crispy treats, you can't go wrong. Add some extra marshmallows and drizzle some chocolate on top!

    Why You Will Like This Recipe

    One of the best things about Rice Krispie treats is how versatile they are. You can add all sorts of different ingredients to change up the flavor and texture.

    For example, you can add chocolate chips, peanut butter, or even Nutella to the mixture to create a richer, more indulgent treat. You can also add food coloring to make the treats more festive and colorful.

    Another great thing about Rice Krispie treats is that they are perfect for any occasion. Whether you are making them for a birthday party, a school event, or just a casual get-together with friends, they are always a hit.

    What Ingredients do I need? 

    Ingredients needed for Cookie Butter rice krispie treats.
    • Marshmallows   -  Jet Puffed Mini Marshmallows 10 oz bag 
    • Unsalted butter - is the most commonly used type of butter in baking, as it allows for more control over the amount of salt in the recipe.
    • Rice Krispies cereal is a popular breakfast cereal made by Kellogg's. It is made with toasted rice that has been expanded and puffed, resulting in a light and crispy texture.
    • Cookie butter spread - is a delicious and versatile treat that has become increasingly popular in recent years. It is made from crushed cookies, often speculoos, which are blended with oil and sugar to create a smooth and creamy spread that can be used in a variety of ways.
    • Chocolate chips - come in a variety of sizes, ranging from mini chips to large chunks. Use whatever you prefer.

    How to make Rice Krispie Treats 

    Stovetop method: In a large pot, melt the butter. Add the marshmallows and keep stirring until they are melted together on medium high heat. Once the marshmallows and butter have melted, stir in the cookie butter spread. Then add in 5 cups of the rice crispy cereal . Add in the ½ cup of mini marshmallows and stir. Not until they're melted though.

    Step 1: Microwave method: Add butter and bag of marshmallows to a medium-large microwave safe bowl. Set the microwave for 1 minute. Mix everything together and check to see if the marshmallows need a little bit longer to cook.

    Step 2: Add in cookie butter, then rice crispy cereal.

    Step 3: Spray an 8X8 pan with non stick spray and spread the cereal and marshmallow mixture into the pan. Let the treats cool for 30 minutes.

    Melt some chocolate in a microwave safe bowl on high for 1 minute. Drizzle on cereal treats. Optional

    Storage Tips

    Wrap the treats tightly with saran wrap. If your 8X8 in glass dish comes with one of those nice lids to cover up I'd use that to keep these treats nice and fresh.

    Ingredients

    • 5 cups of rice crispy cereal
    • ¾ cup of cookie butter spread
    • ½ cup of mini marshmallows
    • ¼ cup of melted chocolate chips

    Instructions

      I think that rewording the directions to say “cook the butter and marshmallows until the butter is melted and the marshmallows are soft” would be more clear. I, too, cooked my marshmallow/butter mix until melted and by then it was quite stiff and hard to stir.

      I'm not sure what you did wrong because I wasn't there to help out. 🙁 My guess is the marshmallows were cooked for too long.
