Rice Krispie Treats and Peanut Butter and Jelly sandwiches combine to make the ultimate Krispie treat bar!
I don’t really like to start a blog post with a life update but I’m so excited because I'm giving my kitchen a makeover. The previous people that lived here painted over a laminate countertop probably for a quick fix and to help sell the place. That countertop stains really easy as well. Then the same thing is happening to the sink. I've been pinning kitchen ideas to my Home Decorating board if you're curious to see what direction I'm going. I don’t have a lot of details yet and when it will actually start. I just met with someone today who took measurements of my kitchen. Then, I have to wait to get some estimates back. It might be total chaos in my kitchen for a while but that is why handy appliances like my air fryer, instant pot, grill, and smoker come in handy!
Rice Krispie treats are so easy to make and come together quickly with the help of your microwave. You can melt marshmallows quickly in less than 1 minute.

WW Friendly Rice Krispie Treats
I hesitate to label anything Weight Watchers these days with all the food police out there. Rice Krispie treats aren’t WW! Puh-lease! Desserts are hard to lighten up to begin with and make WW approved. Krispie Treats are pretty low in points with just the base ingredients which are marshmallows, cereal, and a tad of butter. When you start adding other ingredients to them like Oreos or Peanut butter that is when the points start racking up!
To make these peanut butter and jelly flavor I added some PB2 powder to the marshmallows. Then in the center of the treat, is a layer of strawberry jam! Other flavors of jam can be used if you don’t like strawberries.
How to make Peanut Butter and Jelly Rice Krispie Treats
Step 1 Coat a 9"-x-13" baking dish with cooking spray and line with parchment. Coat parchment in cooking spray.
Step 2 In a microwave-safe bowl add butter and marshmallows. Place it in the microwave for 1 minute.
Step 3 Take the marshmallows out and add in the PB2 powder. Stir the marshmallows to combine and add in Rice Krispie cereal. Continue stirring until everything is well combined.
Press half of the mixture into a prepared baking dish and spread strawberry jam evenly over the layer. Top with remaining Rice Krispies mixture. Slice into squares and serve.

- 2 tbsp. Light butter
- 1 (10-oz.) package marshmallows
- 6 tablespoons of PB2 Powder
- ¼ tsp. Kosher salt
- 6 c. Rice Krispies cereal
- ½ c. sugar-free strawberry jam
Instructions
- Coat a 9"-x-13" baking dish with cooking spray and line with parchment. Coat parchment in cooking spray.
