    Skinny Funfetti Cupcakes

    Skinny Funfetti Cupcakes are made with a can of diet soda and box of cake mix. No one will even know these are diet cupcakes if you bring them to a party! 

    In honor of losing 4 pounds on my first week of Weight Watchers, I made Skinny Funfetti Cupcakes. A 4 pound loss calls for a celebration! For the longest time, I couldn't lose any weight at all and I was stuck. STUCK, I tell you. That is when I decided to rejoin Weight Watcher's again to help me lose that weight.

    When making cupcakes on a diet, adding a can of diet soda to a 15 oz box of cake mix is a pretty well-known recipe. There is no oil involved. Some people like the sugar-free cake mix and you can definitely use that. Sugar alcohols upset my stomach so that is why I don't use them at all. The smartpoints for these cupcakes would be 3 then if making 24 servings.

    On Weight Watchers everything can be eaten in moderation. I know there are quite a few people out there who will come here and say these cupcakes are filled with chemicals because of the Cool Whip and diet soda!  So if you don't like that then this recipe is not for you and move on to find a different recipe.

    The frosting is a container of Coolwhip and I dyed it with a couple of drops of pink frosting.

    Ingredients for Skinny Funfetti Cupcakes

    • Package of yellow cake mix
    • 12 oz can of diet soda
    • 6 tablespoons of rainbow sprinkles
    • 8oz container of fat-free cool whip
    • Pink food coloring (optional)

    How to make Skinny Funfetti Cupcakes 

    1. Preheat the oven to 350 degrees.
    2. Combine the yellow cake mix, diet soda, and sprinkles in a bowl. Stir to combine.
    3. Pour in the cupcake liners to make 24 cupcakes.
    4. Bake for 17-20 minutes or until they start to brown.
    5. Allow to cool slightly. Serve as it is or top with a little bit of powdered sugar so they look cute!
    6. When the cupcakes have cooled completely frost them with the cool whip.  Can add 2 drops of pink food coloring if desired and garnish with sprinkles if desired.

      Is the apple sauce necessary ? and Does it change the flavor ? or can I replace it with something else ?

      I made something similar today but instead water i used a can of crush pineapple
