This week is going by so fast! It feels like it was just Monday, when I was trying to make deep fried pickles at home. What a disaster that was! I was able to get one of the fried pickles to turn out. Deep fried pickles are so good, but I wanted something a bit healthier.

Do you guys remember the cheese sticks I made? The ones where you rolled the cheese in egg roll wrappers and baked them in the oven until the cheese was melted and the egg roll wrappers were crispy? That is same method I decided to use for these un-fried pickles. Roll the pickles up in an egg roll wrapper and then brush them with some olive oil. The seasoning on top is poppy seeds, dried onion, salt, and sesame seeds. Hence, what you'd find on an everything pretzel from the Pretzel Maker. My favorite thing to get at that place. Put that seasoning on the top and bake in an oven at 400 degrees for 10 minutes. Take them out and flip them and bake for another 5 minutes or until the skin turns golden brown. Dip the un-fried pickles in whatever you like. My favorite is always ranch.

Can you believe one of these baked everything pickles is only 1 Weight Watcher's Points Plus if you use non stick cooking spray to get them crispy? That's pretty crazy!

Ingredients

  • 4 pickle spears, patted dry with a towel
  • 4 egg roll wrappers
  • Salt
  • poppy seeds
  • dried onion flakes
  • sesame seeds
  • olive oil (or cooking spray to make healthier)

Instructions

  1. Preheat oven to 400 degrees
  2. Place a pickle in the center of an egg roll wrapper. Roll the pickles up in an egg roll wrapper and then brush them with some olive oil. Repeat this step with the remaining 3 pickles. Put the seasoning on the top and bake in an oven at 400 degrees for 10 minutes. Take the pickles out of the oven and then flip and bake them for another 5 minutes.
