There are different variations of white chicken chili out there and some recipes call for adding cream cheese or sour cream in the pot at the end when the chili is done cooking. Since this is a WW version of white chicken chili, I decided to leave the fun stuff like that out for you to make it zero points, but doesn’t that make this chili recipe sound so much better? If you want to make a creamy version of this opt for Greek Yogurt instead of cream cheese or sour cream and add it at the end of the cooking process.
Ingredients Needed for White Chicken Chili
- 2 large boneless skinless chicken breasts, cut into bite-sized pieces - can use frozen
- 1 tablespoon olive oil
- 1 medium finely chopped onion - Adds depth and sweetness.
- 1 garlic cloves, minced - Essential for flavor!
- 1 tablespoon of cumin
- ¼ teaspoon of black pepper
- 1 4.5 oz chopped green chiles, undrained
- 1 15oz can white beans, drained and rinsed - Cannellini or Great Northern work great.
- 2 (14-ounce) can fat-free, less-sodium chicken broth
- 4 tablespoons of nonfat plain Greek Yogurt - For creaminess without the calories.
- Optional toppings: cilantro, avocado slices, shredded cheese, crushed tortilla chips.
- Cheddar Cheese, Corn
Substitution Tips 🔁
- Chicken: Swap with ground turkey, leftover Thanksgiving turkey, or even plant-based chicken strips.
- Beans: Pinto or chickpeas work in a pinch.
- Greek Yogurt: Use light sour cream or blended cottage cheese for a similar creamy texture.
- Spice Level: Want more heat? Add a diced jalapeño or a dash of cayenne.
How to make Instant Pot White Chicken Chili
What I like about the Instant Pot is that it pretty much acts like a stove top. You can saute vegetables or cook ground beef or chicken in it first then finish cooking it in the Instant Pot.
Step 1 Sauté the Aromatics: In a large pot or Instant Pot (saute mode) over medium heat, heat olive oil. Add onion and cook for 3–4 minutes until soft. Add garlic, green chilies, and spices. Cook another minute.
Saute the vegetables and onions for 10 minutes in the Instant Pot.

Step 2 Build the Base: Add beans, chicken, and broth. Bring to a simmer and cook for 15 minutes to meld flavors. Pressure Cook for 20 minutes.

Step 3 Make It Creamy: Turn off the heat and stir in Greek yogurt and lime juice until smooth.
Serve: Ladle into bowls and top with your favorite toppings!

Like I mentioned above, all the ingredients in this chili/soup base are zero points. Some of the toppings will not be zero points so of course, you will have to use your WW app to figure out those extra topping add-ins.

Hi, I made this and doubled the recipe so I can take it to work for lunch. It was good, but as my husband said, it’s not really chili, it is soup. Regardless, it was healthy and good!
