If you love easy meals on the griddle, this Blackstone breakfast quesadilla is another great recipe to add to your weekly rotation. Itโs crispy on the outside, cheesy on the inside, and packed with classic breakfast flavors like eggs, bacon, sausage, and melted cheese. The Blackstone cooks everything quickly and gives the tortilla the perfect golden brown crunch. Serve it with salsa, sour cream, or hot sauce for an easy breakfast, brunch, or even breakfast-for-dinner idea.

Great to make if you have a hangover from the night before and with a Mimosa! The best part is you can even cook this on a Blackstone Griddle!

Why You Will Like This Recipe
My family loves to play Bingo and this place also serves punch bowls and by the time I actually got this quesadilla for breakfast I was hungover. lol
Booze can do that to you! I remember the quesadilla having eggs, cheese, sausage, bacon, and red bell peppers in it, and I thought that would be super easy to make at home. Once you have all the ingredients cooked (I just did everything in one pan), you can grill the quesadilla on a griddle or even air fry it if you have one of those handy kitchen appliances.
I've included directions for cooking this in a frying pan or on a griddle.
Ingredients needed for the Breakfast Quesadilla
- Flour Tortillas The Carb Counter tortillas from Mission work great for these, or large burrito size tortillas.
- Eggs - The best type of eggs you can buy at the store are organic or free-range eggs, while others may prefer eggs from specific breeds of chickens
- Sausage - use your favorite - I used Jimmy Dean Turkey sausage crumbles because they are quick to cook.
- Bacon - Turkey bacon or regular bacon, I also like to use the precooked bacon that you just pop in the microwave to cook it.
- Condiments - jarred salsa, sour cream
- Topping options - sliced avocado, chopped scallions, chopped cilantro
- See the recipe card below for a full list of ingredients and measurements.

Step 1 Spray a non-stick pan with cooking spray. Let the pan heat up a bit until it's warm over medium high heat.
Step 2 Whisk the eggs in the bowl with a fork and some chopped chives. I usually just eyeball it and add in some pepper. Cook the eggs until they're scrambled and using a heat proof spatula to clean up the eggs in the pan. Spray the pan again with cooking spray.

Step 3 Place one of the tortillas on the pan, then the cheese, sausage, diced bacon, and scrambled egg. Add some more cheese on top of that if you wish. Then the other flour tortilla. Cook the flour tortilla until its golden brown on the bottom. Flip it over and cook the other side like that until everything in the middle is warmed through. Garnish with sour cream and serve with salsa.
Blackstone Breakfast Quesadillas
- Preheat your Blackstone griddle over medium heat and lightly coat the surface with oil or butter.
- Cook your breakfast fillings first. Scramble the eggs on one side of the griddle and cook bacon, sausage, or ham until fully cooked and crispy.
- Place a large flour tortilla onto the griddle and sprinkle shredded cheese over half of the tortilla.
- Add the scrambled eggs and cooked breakfast meat on top of the cheese. You can also add diced peppers, onions, or a little salsa for extra flavor.
- Top with more cheese, then fold the tortilla in half using a spatula.
- Cook for 2โ3 minutes per side, pressing gently with the spatula, until the tortilla is golden brown and crispy and the cheese is melted.
- Remove the breakfast quesadilla from the griddle and let it rest for about 1 minute before slicing.
- Serve warm with salsa, sour cream, or hot sauce on the side.
Storage
Always store leftovers in clean, food-grade containers. The type of container doesnโt really matter. Use zip lock, glass, plastic, whatever! Make sure to store any leftovers in an airtight container.
