    • Drained whole kernel corn - I like the combo of whole corn and cream style corned in this recipe. It makes for a nice soft and fluffy texture.
    • Cream-style corn - is a delicious and creamy side dish made from sweet corn kernels that have been processed to release their natural juices, creating a rich and velvety texture.
    • Sour cream - can also sub plain Non Fat Greek Yogurt for more protein!
    • Melted butter - is the most commonly used type of butter in baking, as it allows for more control over the amount of salt in the recipe.
    • Package corn muffin mix - or Jiffy Corn Mix, is a convenient and versatile pantry staple that allows you to easily whip up delicious corn muffins in no time. Typically made from a combination of cornmeal, flour, leavening agents, and sometimes sugar, corn muffin mix takes the guesswork out of measuring and mixing the dry ingredients.

    How to Make Corn Casserole

    Step 1: In a large bowl, stir together the two cans of corn, corn muffin mix, sour cream and butter.

    Step 2: Pour into a greased casserole. Bake at 350 ยฐF for 40 to 45 minutes, or until golden brown.

    Step 3: Top with generous amount of cheddar cheese and return to oven for another 5 inutes until cheese is melted.

    Please note: I used a 9X9 in pie dish plate instead of the recommend casserole serving dish size. Both work!

    • Do not overmix the batter or the texture can become dense
    • Let the casserole rest after baking so it firms up properly
