    Why You Will Like This Recipe

    This corn casserole is made with layers of corn and corn bread mix and then it gets topped with cheese for a quick an easy side dish you can take to a pot luck, or family Holiday!

    It’s a quick and easy, you just simply mix all the ingredients together in a bowl and then bake it in the oven.

    Ingredients Needed

    Ingredients needed for Corn Casserole.
    • Drained whole kernel corn - I like the combo of whole corn and cream style corned in this recipe. It makes for a nice soft and fluffy texture.
    • Cream-style corn - is a delicious and creamy side dish made from sweet corn kernels that have been processed to release their natural juices, creating a rich and velvety texture.
    • Sour cream - can also sub plain Non Fat Greek Yogurt for more protein!
    • Melted butter - is the most commonly used type of butter in baking, as it allows for more control over the amount of salt in the recipe.
    • Package corn muffin mix - or Jiffy Corn Mix, is a convenient and versatile pantry staple that allows you to easily whip up delicious corn muffins in no time. Typically made from a combination of cornmeal, flour, leavening agents, and sometimes sugar, corn muffin mix takes the guesswork out of measuring and mixing the dry ingredients.
    • Medium shredded cheddar cheese - I like to use reduced fat sharp cheddar cheese.

    What to serve with Corn Casserole?

    Side Dishes: Corn casserole is a popular dish to make during the Holidays or for any potlucks or gatherings. It typically gets served with other side dishes like Paula Deen's Green Bean Casserole or Paula Deen's Crock Pot Mac and Cheese.

    Protein: You can make a nice spiral glazed Pepper Jelly Glazed Ham.

    Dessert: Make some Oreo Fluff or Fruit Cocktail Salad to serve on the side.

    How to Make Corn Casserole

    Step 1: In a large bowl, stir together the two cans of corn, corn muffin mix, sour cream and butter.

    Step 2: Pour into a greased casserole. Bake at 350 °F for 40 to 45 minutes, or until golden brown.

    Step 3: Top with generous amount of cheddar cheese and return to oven for another 5 inutes until cheese is melted.

    Please note: I used a 9X9 in pie dish plate instead of the recommend casserole serving dish size. Both work!

    Can I make corn casserole in a slow cooker?

    Start by mixing the canned corn, creamed corn, cornbread mix, sour cream. Grease the slow cooker insert and pour the mixture into it. Cook on low for 4-6 hours or on high for 2-3 hours, until the casserole is set and golden brown around the edges.

    Feel free to customize your corn casserole by adding ingredients like diced jalapeños, bacon, or chives for extra flavor. This slow cooker corn casserole is a great side dish for any occasion and is sure to be a crowd-pleaser! Enjoy your cooking!

    Recipe Tips and Tricks

    How do I store leftovers? Always store leftovers in clean, food-grade containers. The type of container doesn’t really matter. Use zip lock, glass, plastic, whatever! Make sure to store any leftovers in an airtight container. Choose ripe bananas: Use ripe bananas for your pudding as they will be sweeter and have a softer texture, which blends well with the other ingredients.

    Wrap the casserole dish tightly with saran wrap and refrigerate if there are any leftovers.

    Balance the flavors: Corn casserole can be sweet from the corn and savory from other ingredients like cheese or herbs. Make sure to balance the sweetness with a bit of salt and pepper to enhance the overall taste.

    Get the texture right: The key to a great corn casserole is achieving the perfect texture. Mix the ingredients thoroughly but avoid overmixing to keep the casserole light and fluffy. Bake it until the top is golden brown for a delicious crunch.

    Instead of a casserole dish use a cast iron skillet or pie dish that is 8X8 or 9X9 inches.

    Spray the casserole dish with non stick cooking spray.

    Garnish the casserole with green onion, bacon, jalapenos, or green chilies.

    Add some cayenne pepper for some heat.

    8.5 oz. Jiffy corn muffin mix
    8 oz. sour cream
    1 stick butter, melted
    1 cup cheddar cheese, shredded

    To lighten this casserole up use 3 tablespoons of light butter and fat free sour cream.
