    Baked pumpkin doughnuts are a delicious and easy treat that can be made using cake mix. To make these doughnuts, you will need a box of yellow cake mix, canned pumpkin, pumpkin pie spice, cinnamon, eggs, milk, and vegetable oil.

    This is the pumpkin doughnut recipe WW shared on their Instagram and it was originally in a post I did called 5 Easy Recipes You Can Make using canned pumpkin. I just transferred the recipe over to this post so it was easier to find.

    Why You Will Like This Recipe

    This recipe couldn't be easier and I'm sure you've seen similar recipes floating around online before. All you need is a box of spice cake mix and a can of pumpkin. Both 15 oz in size. The total recipe makes 24 donuts and each donut is 3 points each. If you don't have spice cake mix yellow cake mix or chocolate cake mix works well. Don't like pumpkin use a 12 oz can of diet soda.

    Cans of pumpkin are sold all year long and you don't have to wait until Fall to enjoy this recipe. The only thing good about this time of year is when the stores start marking the canned pumpkin on sale so I always stalk up. Aldi has canned pumpkin for pretty cheap as well. Less than 80 cents a can.

    Ingredients Needed

    • Spice cake mix (chocolate also works well) - is a pre-mixed combination of ingredients that simplifies the process of baking a cake. It usually contains flour, sugar, baking powder, and flavorings such as vanilla or chocolate.
    • Pumpkin puree is a versatile ingredient that can be used in a variety of dishes, from sweet to savory. It is made by cooking and blending pumpkin until it is smooth and creamy.
    • Water
    • Sugar - Or  regular granulated sugar, I do not use sugar substitutes in any of my recipes but if you know the conversions feel free to do so
    • Cinnamon is a spice that comes from the inner bark of several trees from the genus Cinnamomum.

    How to Make Baked Pumpkin Doughnuts

    Step 1: Mix the first 3 ingredients together in a bowl.

    Step 2: Add about 2 tablespoons of cake mix into each donut pan and bake in them in the oven for 12 to 15 minutes at 350 degrees. In a small bowl combine the sugar and cinnamon.

    Step 3: Dip each side of the donut into the cinnamon and sugar mix. Enjoy. Smart Points per donut 3. You can spoon the batter into the donut pan or use a ziplock bag and cut a hole in the bag to pipe the batter into the pan.

    Doughnut Pans

    Do you have a doughnut pan yet? If you don't, I suggest you get one. Baking your own doughnuts is a lot healthier than frying doughnuts. I've had the sudden urge to try frying doughnuts, but this method is a lot easier and it doesn't make your house smell like grease for a couple days. Pumpkin + doughnuts + morning coke (that's what I have instead of coffee) = one fabulous weekend breakfast.
