    Weight Watchers Pumpkin Chocolate Chip Bars

    These pumpkin chocolate chip bars just require two easy ingredients. Canned pumpkin and spice cake mix. Then you top it with some chocolate chips. Pretty easy to make! Especially during the fall.

    Why You Will Like This Recipe

    If you aren’t familiar with this recipe using cake mix and a can of pumpkin puree then you probably don’t get around much I’m guessing. j/k 🙂 

    It’s kind of crazy how many different ways you change up the ingredients on the back of a box of cake mix to make it a bit healthier and with fewer calories. 

    I’ve seen people use Greek yogurt, cans of diet soda, and pumpkin puree. Pumpkin puree is my favorite healthy ingredient swap to make donuts, muffins, cake, bars, etc. 

    It’s simple and only requires 3 ingredients. 

    What Ingredients do I need? 

    In this section, you can find substitutes or suggestions for certain ingredients. I also will try and list out what the ingredients' purpose is for. 

    • Pumpkin Puree - Use organic if you can! The main ingredient is and always will be pumpkin. Some brands are different and use different types of squash that have been pureed. 
    • Cake Mix - Spiced cake mix works best. I haven’t tried this with other cake mix flavors.  Use 15 ounces 
    • Mini Chocolate Chips  - can sub sugar-free chocolate chips 

    How to make Pumpkin Chocolate Chip Bars 

    Step 1 Preheat oven to 350.

    Step 2 In a bowl, mix together the cake mix, pumpkin, and egg (egg is optional) until well combined.

    Step 3 Spray a 9 X 13 pan with cooking spray.

    Step 4 Spread the cake mix batter onto the pan. Sprinkle the chocolate chips all over the pan.

    Step 5 Bake at 350 for 30 minutes or until a tooth pick comes out clean. Cut into 24 bars. Serving size: 1 bar.

    Ingredients

    • 1 15oz box of Spice Cake Mix
    • 1 15 oz can of pumpkin
    • 1 egg
    • ½ cup mini chocolate chips

    Instructions

    1. Preheat oven to 350.
