Why You Will Like Slow Cooker Chicken and Dumpling Soup
Chicken noodle soup is kind of plain and boring when you're sick. This soup is something you'll want to make when you're sick.
The chicken cooks all day in the slow cooker with onions and celery and easily falls apart the moment you shred it. It honestly smells like you're making homemade chicken broth but instead, it's this glorious soup. A simple can of biscuits is added in at the end for an easy dumpling recipe along with some hearty vegetables.
Ingredients Needed for Slow Cooker Chicken and Dumpling Soup
- Onion chopped - provide a sweet and savory flavor to the dish, while also helping to build the foundation of the dish with its aroma and ability to caramelize.
- Celery chopped - adds a slightly bitter and salty flavor, along with a refreshing crunch.
- Chicken breasts - They’re lean and quick-cooking and always come out juicy and tender. Use an instant-read thermometer to make sure that the chicken is not over cooked. When reading labels for chicken breasts try to find ones that say Organic or Free Range.
- Low sodium chicken stock - The best type of stock to use is one that is homemade. For canned stock, I look for ones that say reduced sodium or fat free.
- Salt & pepper to taste
- Frozen mixed vegetables - easy to open and just dump in the slow cooker!
- Reduced fat cream of chicken soup
- S mall biscuits such as Pillsbury or Great Value brand
How to make Chicken and Dumpling Soup
Step 1: Add onion, celery, frozen mixed vegetables, cream of chicken soup, chicken stock, and chicken breast to the crockpot. Season with salt and pepper. Cook on high for 4 hours.
Step 2: Remove chicken breasts from the pot and shred the chicken.
Step 3: Slice biscuits into quarters and add them back to the slow cooker along with the chicken. Stir until everything is combined.
Continue cooking for another 30 minutes to a 1hr until the biscuits are done.
Makes 8 servings, serving size is 1 ½ cups.
Tips for Chicken and Dumplings
The recipe calls for a can of biscuits. Use a brand such as Wal-mart or Pillsbury and find the smallest can you find such as Great Value Buttermilk Biscuits, 7.5 Oz., 10 Count
You can choose to make your own biscuits out of 2 Ingredient dough to help lower the points but I just like how convenient the canned biscuits are!
