Apple Bee's Chicken Fajita Rollup Copy Cat

These chicken fajita rollups are a copy cat recipe of Applebee’s famous chicken fajita rollups! It’s a large burrito with melted cheese, lettuce, pico de gallo, and chicken that has been flavored with fajita seasoning. Many of the recipes I saw online of this had a list of ingredients that was at least 20 items or longer. I used some kitchen shortcuts so all those ingredients aren’t necessary.

Here’s what I did to help reduce the amount of time spent in the kitchen to make these. Most stores (especially Aldi or any grocery store) have prepared pico de gallo and bags of shredded lettuce. The only food you have to cook here is the chicken and I just cooked some Tyson chicken strips in air fryer for 12 minutes at 350 degrees. Chop those up when they are done. Then make the fajita sauce in the bowl and melt the cheese on the tortilla in a pan. So easy and it’s great for lunch!

Grocery List

Here is the basic rundown of what is needed for this dish. I’ve also included substitutes that can be used if you do not have any of these items.

Burrito size flour tortillas - like Ole Extreme Wellness
Shredded lettuce - buy the bags of lettuce that are shredded for you
Pico de gallo - Pico de gallo is a fresh salsa made of tomatoes, onion, cilantro, and jalapeno. Make it easy and buy the pico de gallo that is already prepared for you at the store.
Chicken - any kind of chicken is fine but boneless skinless chicken breast will keep the rollup less points. Like I mentioned above, I like to use Tyson Chicken strips.
Sauce - The sauce is a mixture of mayonnaise, lemon juice, milk, pico de gallo, and fajita seasoning. Usually, I just buy the fajita seasoning in a packet.

How to make Chicken Fajita Rollups

Preheat air fryer to 350 degrees. Place the frozen chicken strips in the air fryer basket and cook for 12 minutes. Remove them from the air fryer basket and dice the chicken. 


While the chicken is cooking prepare the sauce. Combine mayo, milk, lemon juice, pico de gallo, and fajita seasoning in a bowl. Stir to combine.

Heat a medium nonstick skillet and place a burrito tortilla on the grill and sprinkle cheese on top. Heat the tortilla up on the skillet until all the cheese is melted. Remove from heat.

To assemble. Add chicken to the middle of the tortilla, pico, de gallo, and lettuce. Fold in two sides and then roll it up. Cut down the center and dip it in the fajita sauce.

Ingredients

  • 4 Ole Extreme Wellness High Fiber Tortilla Wrap (8 in) 
  • 8 oz of low fat cheddar or Colby Jack Cheese
  • 1 cup of fresh pico de Gallo 
  • 2 cups of shredded ice Berg lettuce 
  • 8 oz of cooked shredded chicken breasts or frozen chicken strips 

 

Sauce: 

  • ½ cup low fat mayo 
  • 1 tablespoon of lemon juice
  • 4 tablespoons of 1% milk 
  • 4 tablespoons of pico de Gallo 
  • 1 tablespoon of fajita seasoning mix

    I have been eating this forever except I get the actual burrito wrap grilled. They make it nice and brown like the old Tijuana Philly. It melts the cheese and blends it all together. Love it
