
Cowboy caviar is a delicious bean salsa made with black-eyed peas, black beans, and corn. Perfect for Summer snacking near the lake or pool! It’s also a delicious way to get your fiber intake for the day. Use your favorite corn chips for dipping.
If your mind automatically went to the caviar that everyone thinks of that is served at fancy restaurants this is not the same! Apparently, this dish was first served on New Year’s Eve as a joke because it was similar to caviar. Black Eyed peas are usually eaten for luck on this day as well.
This dip has very many names such as Texas Caviar, Country, or even Southern Redneck Caviar.
What Ingredients do I need for Cowboy Caviar?

Italian Dressing - this is the secret ingredient that makes the caviar taste so good! This is also an optional ingredient. There's a dressing below in the ingredients list that you can use if you don't have any Italian dressing.
Tomatoes - fresh Roma or beef steak, always best during the Summer months
Black Eye Peas - and black beans make up the majority of the caviar. Don’t make this if beans are not your favorite food to eat.
Black Beans - look for low sodium/organic canned beans to control the amount of salt that goes into the dish.
Sweet Corn - fresh, canned or frozen (thawed)
Onion - red, yellow, white onions. If you like a milder onion try shallots or green onions.
Bell Pepper - for color and crunch!
Cilantro - Think cilantro tastes like soap? Try fresh parsley instead.
Variations for Caviar
Add some Diced avocado for creaminess.
A can of Rotel tomatoes if you don’t have fresh ingredients such as tomatoes and pepper. Make sure to drain the can very well.
Sour cream or cream cheese to make it a creamy dip
How to make Cowboy Caviar
- Mix all ingredients together in a bowl. Cover tightly.
- Refrigerate at least 8 hours before serving, so flavors can fuse (this is the key to this dish).
- Serve with Tostitos Scoops or whatever chips you prefer.

- 1 (15.5 ounce) can black-eyed peas, drained
- 1 15 oz) can black beans, drainedÂ
- 1 (14.5 ounce) can diced tomatoes, drained
- 2 cups frozen corn kernels, thawed
- ½ medium onion, choppedÂ
- ¼ orange bell pepper, finely chopped
- ½ cup chopped pickled jalapeno peppers
- ½ teaspoon garlic salt
- ¾ cup chopped cilantro
- ¼ cup extra virgin olive oilÂ
- 2 tablespoons red wine vinegar
- 3 cloves crushed garlicÂ
- 1 tsp dijon mustardÂ
- 1 pinch of sugarÂ
