    • Italian Dressing - this is the secret ingredient that makes the caviar taste so good! This is also an optional ingredient. There's a dressing below in the ingredients list that you can use if you don't have any Italian dressing.
    • Tomatoes - fresh Roma or beef steak, always best during the Summer months
    • Black Eye Peas  -  and black beans make up the majority of the caviar. Donโ€™t make this if beans are not your favorite food to eat. 
    • Black Beans - look for low sodium/organic canned beans to control the amount of salt that goes into the dish. 
    • Sweet Corn  - fresh, canned or frozen (thawed) 
    • Onion - red, yellow, white onions. If you like a milder onion try shallots or green onions. 
    • Bell Pepper - for color and crunch!   
    • Cilantro -  Think cilantro tastes like soap? Try fresh parsley instead.

    Variations for Caviar 

    Add some Diced avocado for creaminess. 

    A can of Rotel tomatoes if you donโ€™t have fresh ingredients such as tomatoes and pepper. Make sure to drain the can very well. 

    Sour cream or cream cheese to make it a creamy dip

    How to make Cowboy Caviar 

    Step 1: Mix all ingredients together in a bowl. Cover tightly.

    Refrigerate at least 8 hours before serving, so flavors can fuse (this is the key to this dish).

    Serve with Tostitos Scoops or whatever chips you prefer.

    Pro Tips for Cowboy Caviar

    • Allow the Cowboy Caviar to chill before serving for the best flavor.
    • Drain the beans thoroughly to prevent excess liquid from watering down the dressing.
    • Use fresh lime juice instead of bottled juice for the brightest flavor.
    • Dice the vegetables into similar sized pieces so every bite contains a little of everything.
    • If you prefer a spicier version, leave some jalapeรฑo seeds in the mixture or add another pepper.
    • For extra creaminess, stir in diced avocado just before serving.
    • If making ahead, wait to add avocado until serving time so it stays fresh and green.

    Storage for Cowboy Caviar

    Store leftover Cowboy Caviar in an airtight container in the refrigerator for up to 4 days.

    Give it a good stir before serving since some of the dressing will settle as it sits.

    If adding avocado, it is best to add it only to the portion you plan to serve immediately. Avocado tends to brown after being refrigerated.

    This recipe is not recommended for freezing because the fresh vegetables lose their crisp texture after thawing.

    • ยฝ teaspoon garlic salt
