Why You Will Love this Recipe
Sheet pan meals are the best and they are so easy because of the easy clean up after! This meal still continues to be one of my favorite recipes today.
This recipe has been adapted and made suitable for a WW diet. The original recipe called for 1 package of smoked sausage, 5 medium potatoes, and 2 tablepoons of olive oil just in case people were looking for old the recipe.

Ingredients Needed
Smoked Sausage - If you have never had smoked sausage (of ANY kind) made from a butcher you are missing out. The taste and flavor of smoked sausage are phenomenal. Or you can get a flavored sausage like chicken and apple to help lower the calories.
Potatoes - When cutting the potatoes make sure they are the same size as the sausage rounds are so that everything cooks easily in the oven. Same goes for the onions.
Use red or yellow potatoes
Onions - When roasted onions in the oven they almost turn out like caramelized onions that you would make in a skillet. Just these three ingredients are so simple and make for one tasty dish.
See recipe card below for a full list of ingredients and measurements.
How to make Oven Roasted Sausage and Potatoes
Step 1: Preheat the oven to 400*F.
Step 2: Line a large baking sheet with tin foil, and spray with cooking spray. Set aside.

Step 4: Place into the heated oven and roast for 45 minutes to an hour, stirring every 15 minutes or so, until the potatoes are golden brown and tender. Turn off the oven.
Tips for Oven Roasted Smoked Sausage and Potatoes
- If you are looking to make this dish a little more Weight Watcher friendly use chicken sausage or turkey sausage instead of smoked sausage. This will help lower the points and use less oil as well. If you use cooking spray instead oil make sure to spray the potatoes and sausage liberally.
- Cooked chicken sausage is 3oz for 3 smart points
- Cooked turkey sausage is 3 oz for 4 smart points
- Smoked paprika is a good sub for regular paprika.
- Use olive oil cooking spray in place of olive oil
- Disclaimer: The pictures were taken made with ground pork and since I made this recipe I have used chicken and turkey sausage. I'll try to post an updated picture using these two sausages. I apologize if that misleading.
Air Fryer Method
Set air fryer temp to 350. Place potatoes and onions in a 5.3qt air fryer basket and drizzle with olive oil.
Season with salt, pepper, and paprika. Toss the potatoes and onions until everything is coated. Set the timer for 6 minutes and let the air fryer go.
Once the 6 minutes are up, take out the basket and add the sausage rounds and continue cooking for 6 minutes. This recipe is so good in the air fryer!

I made this in the Air Fryer, 5.3 qt basket. Unbelievable recipe. It fit my recipe criteria perfectly. Minimal ingredients with minimal work involved. Perfect. I made it as written. I used Eckrich smoked sausage sliced thin on the diagonal. I used three Russet potatoes, peeled and cut into bite size pieces. I used one yellow onion cut into pieces.
I set my Air Fryer to 350 degrees, preheated. Threw the potatoes and onion in and "fried" for 3 minutes, stirred, then 3 more minutes. Added the sausage. Fried for 3 min. , stirred and 3 more mins. At the end of the 12 minutes I felt the potatoes could have been softer so fried for 5 more minutes. Yes the added time browned the sausage more but still was very good.
As this recipe is a "keeper", next time I would up the temp to 370 or fry the potatoes longer before adding the sausage. I might add more seasoning. Perhaps garlic powder or even a small bit of chile powder. The possibilities are endless.

No, the recipe doesn't say to cover it.

Is it better to cover it while it’s baking

I made this a while ago, but being summer, I made it in a foil pack (1/2 recipe). Just put it on the grill, kept flipping every so often, when it was done, I just brought it in, sprinkled on the cheese and wrapped it loosely until the cheese melted. Came out very good. Oh, and I had added some green pepper to the mix.
Christine says
I just made it and added a little BBQ sauce just to coat that mixed with the cheese was amazing thanks!!!

I made this earlier this week , it was so delicious! I used smoked turkey sausage and added some diced red pepper. The paprika and thyme add great flavor, and the cheese at the end, too. My house smelled fabulous! Thanks for the recipe.
