I had a lot of shredded rotisserie chicken leftover from the day before. I just love buying those chickens. They’re so flavorful and juicy. You can keep the chicken in the fridge and use it on top of pretty much everything. Yesterday I was making a strawberry and spinach salad with chicken on top and poppy seed dressing. Today I really wanted buffalo chicken dip and had everything but the buffalo wing sauce. Use light sour cream, cream cheese, and cheese for this to make it lighter. Or opt the other way out and go on the full-fat versions of every ingredient in this. Dip with pretzels, corn chips, carrots, or celery. I’ve even used the leftovers for this dip to make a casserole with it. I don’t like blue cheese at all, so I just used low-fat mozzarella cheese.
Skinny Buffalo Chicken Dip Ingredients (Breakdown)
If you’re not trying to lose weight, go ahead and use the full-fat version of cream cheese. I like to use 1/3 Less Fat cream cheese versus the Fat-Free kind. I’m not really a fan of anything that is fat-free because of the way the cheese melts after baking it in the oven.
Greek yogurt and chicken are both zero points on Weight Watchers so feel free to add more if you like. Can you believe Franks Buffalo Wing Sauce is 0 points for 1/2 cup? I forget exactly when the points for that start counting, but that always seems to amaze me. Blue cheese crumbles are optional. I’m not really a fan and will replace it with low fat Ranch varieties.

- 4 oz ) 1/3 less fat cream cheese Nefchalla
- 3/4 cup plain Greek Yogurt
- 1/2 cup Franks Buffalo Wing Hot Sauce
- 1/4 cup light blue cheese crumbles (optional)
- 1 cup shredded part-skim mozzarella cheese
- 2 cups cooked shredded chicken
- Place all the ingredients in a medium saucepan, over medium heat. Stir constantly until thoroughly heated and cheese is melted. About 15-20 minutes.
- Serve warm with tortilla chips and fresh veggies. Enjoy!
