Why You Will Like This Recipe
This soup typically includes ground beef, tomatoes, onions, garlic, and Italian herbs, all simmered together with beef broth and broken lasagna noodles.
Lasagna soup is then topped with a generous dollop of ricotta cheese and sprinkled with mozzarella and parmesan cheese. It's a perfect dish for a cold winter night or anytime you're in the mood for a delicious and satisfying meal.
Lasagna soup is one of my top 100 recipes on this site! It is lasagna in soup form and a reader favorite. I will sometimes heat up some Texas toast (Lite) and use that to dip the soup in if I have enough points left over for that.
I like to make this lasagna soup during the Winter months here. It helps me get through the dreadful and super cold awful months of January and February in Fargo, ND. My mom sometimes jokes about how whenever she makes lasagna, her lasagna is so soupy. Well, guess what Ma? Mine is too. 🙂
Ingredients Needed
- Onion, chopped (yellow or white)
- Lean ground beef Is considered better than higher fat options for several reasons. First, it has less saturated fat, which can contribute to heart disease and other health issues. Additionally, it tends to have fewer calories per serving, making it a good option for those watching their weight. The 96% lean ground beef from Aldi is my favorite.
- Garlic, minced - Chopped fresh garlic can take some time to chop so I often always use the freshly minced garlic that comes already made in a jar.
- Crushed tomatoes - or store bought marinara sauce can be used.
- Dried oregano - Is a common herb used in cooking, particularly in Mediterranean and Mexican cuisine. It has a pungent, slightly bitter taste and a strong aroma
- Low-sodium chicken broth - Some people prefer homemade stock, which allows for control over the ingredients and seasoning. Othe rs prefer store-bought stock for convenience.
- Lasagna noodles, broke into 2" pieces - or any pasta shape, I will sometimes use Malfalda.
- Fat-free shredded mozzarella - Reduced-Fat Cheese has a lower calorie count and less saturated fat than regular cheese, but it may also have a different taste and texture. It also helps with keeping the calorie count pretty low for this recipe.
- Toppings (optional):
- Grated Parmesan, for garnish
- Torn fresh basil, for garnish

Recipe FAQS
Yes, lasagna soup can be made in a crock pot. Simply brown the beef and onions in a skillet, then transfer to the crock pot along with the other ingredients. Cook on low for 6-8 hours or on high for 3-4 hours.
Yes, lasagna soup can be made in an Instant Pot. There are many recipes available online that provide instructions on how to make lasagna soup using an Instant Pot. Simply search for "Instant Pot lasagna soup" to find a recipe that suits your preferences.

This is really good. I used the crushed tomatoes so it was more brothy. I also subbed trader Joe's dry mini ravioli (cooked sperated) and let people put in how many they wanted. It was a big hit!

This soup is amazing! Love your recipe. Only change I made was using the 99% fat free ground turkey for zero points. Wouldn’t take her ponts be lower now? By the way my kids loved it as well! Thank you so much for sharing! Will make this again!
Kim says
I did buy regular ground turkey but was wondering if it would be bland because I’m sure the sausage has a lot more flavor.
Jenna says
You can use chicken sausage or just ground up chicken.
Kim says
What can I use in place of ground turkey sausage? I’ve looked in 3 stores for that but can’t find it.

This soup looks soooo good and I am going to try it. I never watch the Cooking Channel any longer.
I use to be glued to the channel but when they put all the reality shows on, that ended it for me.
Lisa says
Amazing!!!! Made my own zero-point marinara....used zero point Kraft fat free cheese....I haven’t run the points yet, but the only points are in the noodles and turkey. Oh, and I baked the 1 point ole tortillas, sprinkled with sea salt....this soup is amazing! Hope it freezes well?

Made this the other day, did make a couple of changes based on what I could find. Used sweet italian chicken sausage instead of turkey (couldn't find any turkey sausage that day), subbed italian seasoning for the oregano, subbed low sodium chicken bone broth (because I could ). Added 1/2 cup of low fat ricotta at the end for a little more richness.
I do have concerns though, reading through the recipe and nutritional breakdown. I don't see any way that the calorie count can be accurate. Between the lasagna noodles, the turkey sausage and low fat mozzarella cheese, you're easily higher than 189 calories in a cup. Closer to 280-300 in our estimation. But still an excellent soup.
