Winter Storm Jonas made me kind of jealous. We haven’t had a blizzard like that here in YEARS. The most it has snowed in ND was for only a day and I believe it was at around 5 inches total. Although, if you want to learn how to drive in the Winter time, just come up to North Dakota or Minnesota and we can teach you. We aren’t afraid to go out on snow covered roads. My only Winter driving advice is to always travel at least 10 to 15 feet behind another car just in case you have to slam on the breaks.
I’ve been kind of obsessed with cottage cheese lately. Try cottage cheese with two hard boiled eggs. It’s delicious and very filling, plus it has 19 grams of protein in it. I’ll have that for breakfast some mornings. These pancakes are on the low carb side. Find a good sugar free maple syrup if you can. Is there even a good sugar free maple syrup out there? I’d rather use the real maple syrup or sometimes I’ll eat these with just some melted butter. I actually did that one time. Brought these pancakes to work for breakfast the next morning and had forgotten my maple syrup. Just ate them with melted butter on top.
- 1½ cups of cottage cheese
- 5 large eggs
- ⅓ cup of flour
- In a food processor pulse the cottage cheese until smooth. Add in the egg one at a time and then the flour until everything is well combined.
- Heat a non stick skillet and spray with cooking spray. Cook each pancake on one side until you see those little bubbles and then flip. They take about 2 minues per side.
