Why You'll Love This Soup
This soup takes everything you love about chicken fajitas and puts it into one easy slow cooker meal. The chicken becomes tender as it cooks, while the tomatoes, peppers, onions, corn, and beans create a flavorful and hearty broth.
Using fajita seasoning keeps the ingredient list simple while adding plenty of smoky, savory flavor. You can use a store-bought seasoning packet or your favorite homemade fajita seasoning.
I also love that this recipe is easy to customize. Add extra vegetables, make it spicier with jalapeños, or switch up the toppings depending on what you have in the refrigerator.

Pro Tips for Fajita Soup
Use chicken breasts that are similar in size so they cook evenly.
For more flavor, use a combination of red and green bell peppers. You can also add a diced jalapeño if you like spicy food.
Don't skip the lime juice at the end. A squeeze of fresh lime makes the flavors taste brighter.
If you prefer a thicker soup, use a little less chicken broth. For a brothier soup, add an extra cup of broth.
You can also use boneless, skinless chicken thighs instead of chicken breasts. They stay especially tender in the slow cooker.
Storage
Store leftover Chicken Fajita Soup in an airtight container in the refrigerator for up to 4 days.
You can also freeze the soup for up to 3 months. Let it cool completely before transferring it to freezer-safe containers. Thaw overnight in the refrigerator and reheat on the stovetop or in the microwave.
If you plan to freeze individual portions, leave a little room at the top of the container because the soup will expand as it freezes.
Serving Suggestions
There are so many fun ways to serve this soup. Top each bowl with shredded cheddar or Monterey Jack cheese, diced avocado, sour cream, fresh cilantro, sliced jalapeños, or green onions.
Tortilla chips are perfect for dipping, or you can crush a few chips over the top for some crunch.
For a bigger meal, serve the soup with a simple side salad, cornbread, or warm flour tortillas.
