    Best Chicken Fajita Soup

    Let's talk about this chicken fajita soup. When you think of those classic fajitas at the Mexican restaurant they come with a tortilla, chicken, onions, peppers, and all the taco fixings. It's only 2 smart points per serving with all the 0 point ingredients minus the chicken stock and cream of chicken soup.

    Why You'll Love This Soup

    The soup is really rich and creamy and the chicken, corn, black beans, and salsa are all 0 smart points.  Since fajitas usually come with peppers and onions you could always cook some off on the stove top and add it to the top of the soup with some chips, cheese, or reduced fat sour cream. This soup is definitely a keeper and it almost reminds me of Chicken Tortilla soup.

    Ingredients Needed

    1 pound boneless, skinless chicken breasts - can sub boneless chicken thighs 

    2 (10.75 ounce) cans condensed cream of chicken soup (98$ fat-free)

    1 cup fat-free salsa

    2 cups frozen corn

    1 (15 ounce) can black beans, rinsed and drained

    1 ½ cups water

    1 package of Fajita Seasoning Mix (I used Mrs. Dash)

    1 cup of low-fat cheddar

    Soup Toppings: 

    Looking for ways to add even more flavor to your soup?  These will of course add extra points. avocado, Tortilla chips, diced tomatoes, bell peppers, more shredded  cheese, Cilantro

    How to Make Fajita Soup 

    Spray slow cooker with nonstick cooking spray.

    Place chicken into slow cooker.

    In a bowl, mix together cream of chicken soup, salsa, corn, black beans, water, and faita seasoning. Pour over chicken in slow cooker. Cook on low for 4-6 hours (or high for 2-3 hours).

    Remove chicken and shred using two forks.

    Put chicken back into slow cooker, add cheese, and let cook for 15 more minutes.

    Serve with your favorite fajita toppings.

    Can you make this with homemade cream of chicken soup? Yes

    Can I make my own fajita seasoning? Yes, usually fajita seasoning has chili powder, garlic powder, onion powder, cumin, oregano, and a few other spices in that mix. 

    Can I make this in my Instant Pot? Use the Soup setting, no need to worry about the time since that's already taken care of for that specific setting. 

    This soup is not recommended for a keto diet or vegan lifestyle. 

    Can I make this in the slower cooker? Yes, cook on low for 4 to 6 hours

    This soup can be prepped the day ahead.

    How to store leftovers: Always store leftovers in clean, food-grade containers. The type of container doesn’t really matter. Use zip lock, glass, plastic,  whatever!  Make sure to store any leftovers in an airtight container before putting it in the freezer or fridge.

      Love how easy this recipe is!! I actually use that taco seasoning on my peppers, onions, and chicken for fajitas and its amazing and easy too! I"ll add a little bit of lime juice and garlic also!! Actually that seasoning is so versatile in my house because I use it in ground turkey for taco night, fajitas, carne asada, salmon .. its the best remade seasoning in a pack!!

      This is actually 6 smart points .per nutrition info . Are you posting for freestyle and calling it smart points . I've noticed this many of thr recipes . I'm a bit confused ? Thank you
