    Air Fryer Chicken Quesadillas

    Air Fryer Chicken Quesadillas -  Homemade quesadillas are super easy and healthy  to make in your air fryer!

    On Wednesday I made Instant Pot BBQ Chicken and I have been finding different ways to use up leftover chicken. This air fryer chicken quesadilla is a good way to use up any leftover chicken you have in your fridge and the whole quesadilla is only 7 smart points!

    I’ve been experimenting with different size tortillas in the air fryer and the time it takes to get each tortilla crispy. The burrito sized tortillas were a tad too large for my air fryer. (5.3 quart) The edges would crimp up on the side of the basket and the end result was not very pretty. The standard size tortillas that you use for tacos worked just great. The brand I like is only 2 points 1 tortilla. Quesadillas are usually made up of your choice of protein, cheese, and some kind of salsa. I chose to use the leftover BBQ chicken I made in my Instant Pot, Trader Joe’s Lite shredded cheese and some canned pineapple tidbits. Sooooo yummy and with the help of the air fryer there is a lot less fat to fry them on each side.

    How to make Air Fryer Chicken Quesadilla

    • Take one tortilla and spread ½ cup of the Instant Pot BBQ chicken on top. Add the cheese and pineapple. Then place the other tortilla on top.
    • Set the air fryer temperature to 350 degrees F.
    • Place the quesadilla in your air fryer basket and spray the top with cooking spray. Set the wire rack that came with your airfryer on top. If you don’t place anything on top of the tortilla it will fly around move inside.
    • Set the timer to 5 minutes and let it go. Once the 5 minutes is up take out the basket and flip the tortilla. Spray that side of the tortilla, Place the wire rack back on top, and continue cooking for another 3 minutes.

    Tips for Air Fryer Chicken Quesadilla

    • The tortilla on top of the quesadilla will fly around in your air fryer basket if you don’t have anything holding it down. Please use a wire rack to help your quesadilla stay in place.  If you do not have an air fryer rack you can use any kind of oven safe dish in your air fryer to keep it in place.
    • Serve some guacamole, fat free salsa, or greek yogurt on the side.
    • Other chicken recipes that would be good inside these quesadillas are Salsa Chicken and Slow Cooker Buffalo Chicken Sandwiches. Instead of making sandwiches with the recipe place them inside quesadillas.
    • Please do note that every air fryer is different and if someone asks me if this recipe will work for a certain type of air fryer it more than likely will. I just don’t have room in my house to buy every type of air fryer and I don’t have the time during the day to try it with ALL the different air fryers out there other than my own. The type of air fryer I use is the Power XL air fryer and that is the only one I use.
    • The BBQ chicken recipe is ½ cup of chicken for 0 points. I used 2 Frescado brand tortillas (1 tortilla is 2 points). You do not have to use this brand, just use whatever your favorite low point tortilla is. Trader Joe's has a great Lite shredded 3 cheese blend that is only ¼ cup for 2 points. Sadly, I do not live next to a Trader Joes. The closest one is ony 320 miles away and I have to stock up on this cheese whenever I go there. 🙁

    Cooking Spray

    • 2 6 in flour or corn tortillas
    • ¼ cup of Light Cheese or reduced fat cheese
    • ½ cup of Instant Pot BBQ Chicken
    • 2 tablespoons of pineapple tidbits 2 scallions

    Instructions

    1. Take one tortilla and spread ½ cup of the Instant Pot BBQ chicken on top. Add the cheese and pineapple. Then place the other tortilla on top.
    2. Set the air fryer temperature to 350 degrees F.
    3. Place the quesadilla in your air fryer basket and spray the top with cooking spray. Set the wire rack that came with your airfryer on top. If you don’t place anything on top of the tortilla it will fly around move inside.
    4. Set the timer to 5 minutes and let it go. Once the 5 minutes is up take out the basket and flip the tortilla. Spray that side of the tortilla, Place the wire rack back on top, and continue cooking for another 3 minutes.
    5. Serving Size: 1 quesadilla.
