    Weight Watcher's Slow Cooker Buffalo Chicken Sandwiches

    I made these for treat day and the sandwiches were a big hit. The buffalo wing sauce makes the chicken really runny, and everyone thought that it could have been a little bit thicker. Next time, I'm going to try adding some flour or cornstarch to thicken the sauce up a bit. They were calling them buffalo sloppy joes.  Ha ha.

    The recipe makes a lot. I ended up doubling the recipe and used 6 pounds of boneless chicken, and now I have a lot of buffalo chicken to use up. That's ok though, because I am a buffalo chicken lover freak and I look forward to using up the leftovers. Too bad the husband doesn't like buffalo chicken, he's missing out.

    Ingredients

    • 3  boneless chicken breast
    • 1 cup of Franks  buffalo wing sauce, divided
    • 8 lite hamburger buns
    • 2 roma tomatoes, sliced
    • leaf lettuce

    Instructions

    1. Add defrosted chicken breast and ½ cup of water to a slow cooker and cook on high for 4 to 5 hours or low for 7 hrs. Drain the liquid out of the slow cooker and shred the chicken. Add the chicken back to the slow cooker and the buffalo sauce.
    2. Serving size: One lite hamburger bun, ¾ cup of chicken, tomato slice, and lettuce

      I was never a wing person. When I steratd dating Nor and he still ate meat, we would joke about how there was really no polite way to eat chicken wings. Regardless of how appropriate you’re trying to be, at the end of the day you’re still sucking meat off a bone with sauce all over your face and fingers. There is truly no polite way to do it. Nor was the most gracious wing-eater I’d seen, and to this day he is the only person I’ve ever seen eat a tray of buffalo wings and not be completely smeared with sauce and grease at the end of that ordeal.

      There seems to be a problem with this recipe. It serves 8 though you use 6 rolls to divide up the chicken. In my book that's 6 servings. It tells you to add butter and butter is not listed in your ingredients. Also the picture shows it topped with cheese and there is no cheese listed in your ingredients. So it makes me think the points values on this can not be correct. It looks like a great recipe worth trying but not sure I wouldn't want to put this in the recipe builder before attempting it.
      Just thought you should know the errors in this recipe listed.

      These look really yummy! I've been using my crock pot a LOT the past year to make WW friendly recipes. One secret I've discovered for thickening is instant tapioca (in the red box). It's so easy because you can add it in the beginning, no messing with constarch/flour and water slurries at the end. Since I'm a family of 2, I will need to try this in a smaller batch 🙂
