    Biggest Loser BBQ Bacon Meatloaf‏

    This BBQ bacon meatloaf is a mouthwatering dish that combines the classic comfort of meatloaf with the smoky, tangy flavor of barbecue sauce and salty, savory bacon. It is also Weight Watcher friendly. To make this delicious dish, you'll need ground turkey,eggs, onions, garlic, salt, pepper, barbecue sauce, and bacon.

    Another grocery store mishap this week. On my grocery list I had written down milk. I even walked by the dairy section in the grocery store this weekend, and thought to myself, I want to get the plastic bottle so we can recycle it. I walked by it and totally forgot about it, because I had ricotta cheese on the mind. I really have to stop doing that.

    Why You Will Like This Recipe

    This recipe I found surfing the Weight Watcher boards Recipe Review forums. It is from the Biggest Loser cook book. Another recipe I've tried from that book that was really really good was the Baked Ziti. That recipe is also on the menu for this week.

    It makes a lot for two people so we will have a lot of left overs. I didn't use any turkey bacon at all because I tried it once and didn't really care for it at all. Turkey bacon is good, but it isn't Bacon. The recipe ended up being a little bit higher in calories, but oh well. It was worth it. 😉

    Ingredients Needed

    • Ground Turkey - can be used in place of ground beef in most recipes and is a great way to reduce the amount of saturated fat in your diet. It is also a good source of protein and can be a healthier option for those looking to cut down on red meat consumption.
    • Turkey bacon cut in half crosswise
    • Garlic chopped - Chopped fresh garlic can take some time to chop so I often always use the freshly minced garlic that comes already made in a jar. 
    • Red onion - chopped
    • Egg Whites or 1 whole egg - The best type of eggs you can buy at the store are organic or free-range eggs, while others may prefer eggs from specific breeds of chickens
    • Oats - Also known as rolled oats, are a type of oatmeal that has been steamed and rolled to create flat, oval-shaped flakes. They are a popular breakfast food and can be cooked on the stove or in the microwave with water or milk.
    • Milk - Dairy does not like me at all so I go for a lactose-free milk such as Fairlife. It also has more protein in it.
    • BBQ sauce - use your favorite store bought BBQ sauce or make your own

    How to Make BBQ Bacon Meatloaf

    Preheat oven to 350

    Step 1: Spray loaf pan with Pam and heat a skillet on medium heat. Add onion and bacon. cook 6-8min. Or continue cooking bacon until it is done and onions starting to brown.

    Step 2: In a large bowl mix milk and oats. Let stand 3 min.

    Step 3: Add cooled onion mixture, ground turkey, garlic and egg whites.

    Step 4: Mix with your hands and form into loaf. Place in loaf pan and top with BBQ sauce. Bake 35-40min.

    Recipe Tip

    If the onions start to brown fast you can add a couple tablespoons of water in the pan.

    Add more vegetables like chopped carrots or zucchini to the onion and bacon mixture. It will add some more fiber.

    Serve this meatloaf with some Dairy Free Mashed Potatoes or Homemade Brown Gravy from scratch.

    4 slices of turkey bacon
    1clove garlic chopped
    1c chopped red onion
    2 egg whites
    ⅔ cup oats
    ½ cup milk
    ⅓ cup BBQ sauce


    Instructions

    Preheat oven to 350
    Spray loaf pan with Pam

    In a large bowl mix milk and oats. Let stand 3 min.
    Add cooled onion mixture, ground turkey, garlic and egg whites.
    Mix with your hands and form into loaf. Place in loaf pan and top with BBQ sauce.
    Bake 35-40min.

    Cut into 6 equal portions
