Today is the first day of Fall and it’s time to bust out your slow cooker and make this delicious pork carnitas recipe. What can you make with these pork carnitas? Tacos, nachos, burrito bowls, whatever your little heart desires. This is no where near close to an authentic pork carnitas recipe but does the trick when you're in a hurry and want to serve up a good dinner to your family.
The flavor of the pork reminds me of the pork at Chipotle. This is so easy to prep ahead you can make burrito bowls with it for days and that is exactly what I plan on doing with the leftovers!

Recipe Tips and Tricks
Low Carb: Use cauliflower rice instead of regular rice. Cauliflower rice will also be 0 points on WW plans.
Sub chicken for pork: Sometimes we don’t always have pork in our fridge or freezer but chicken will also work with this.
Toppings: Black beans, corn, cilantro, and pico de Gallo are all zero point options for WW plans. Avocado will be extra points. For cheese I’d pick either cotija or queso fresco for the topping. If you’re feeling up to it make some queso to top it all off.
Instant Pot Instructions:
In a medium bowl whisk together the ingredients for the sauce. Season all sides of pork with salt and pepper.
Place pork in pot and pour the sauce over the pork. Select Manual Pressure and cook on high for 30 minutes. Set vent to “Sealing”.
When time is up, quick release on pressure cooker. Shred pork with fork.
Shred the pork with forks.
How to Make Slow Cooker Pork Carnitas
- Season the pork with salt and pepper. Place it in the crockpot.
- Mix together the remaining ingredients in a bowl and pour over the pork.
- Cook for 6-8 hours on low until the pork is fork-tender and easily shreds. Or 4 to 5 hours on high.
- When the pork is fully cooked preheat your broiler. Place the shredded pork on a baking sheet and place under broiler until pork is crispy on the outer edges. About 5 minutes. This step is optional if you are in a hurry.

- 2.5 lbs. pork shoulder,lean only, trimmed of fat
- 1 onion, sliced
- 3-4 garlic cloves, minced
- ¾ tsp salt
- ½ tsp. pepper
- 1 tsp oregano
- 1 tsp cumin
- 1-2 diced chipotle peppers and 2 tablespoon adobo sauce
- ¾ cup chicken broth
- 1-2 bay leaves
