    Slow Cooker Sausage and Pineapple

    Slow cooker sausage and pineapple is a delicious dish made by combining savory sausage links with sweet pineapple chunks in a slow cooker.     This time of year, I think of college students going back to school and tailgating season. I made the mistake of going to Target 1 weekend ago when every college student was there in town. That was a mad house. This time of year is also really cool in the morning and a jacket is needed but not needed when you get off work in the afternoon. The cool breeze is coming through the windows and Summer is almost coming to an end. I'm looking forward to this because it freezes and all the out door allergies disappear!

    Ingredients Needed

    • Kielbasa Sausage (56 gram links) - or any type of sausage will work
    • Pineapple chunks, drained (fresh pineapple is also fine)
    • Apricot jam - is a delicious spread that is perfect for breakfast or as a topping for desserts. Made from fresh apricots, sugar, and lemon juice, this jam is bursting with flavor and packed with nutrients.
    • Thai sweet chili sauce - is usually made from a blend of red chili peppers, vinegar, sugar, and garlic, and has a sweet and spicy flavor that is perfect for dipping, marinating or glazing.
    • Soy sauce - use a Low Sodium or if you don’t have that on hand go for Tamari or Coconut Amino Acids
    • Garnish: dried parsley flakes (optional)

    How to Make Sausage and Pineapple in the Slow Cooker

    Step 1: Cut the turkey kielbasa sausage into large chunks.

    Step 2: In a small bowl combine the apricot jam, sweet chili sauce, and soy sauce. Stir until well combined.

    Step 3: Add the sauce to the slow cooker with the kielbasa links and pineapple.

    Step 4: Cook on high for 2 hrs or on low for 4 to 6 hours. 

    Tips for Slow Cookers

    When choosing a slow cooker think of the size of your family first. Do you have a large family of 6 or more? You probably want a larger crockpot that is 7 qt or more. For smaller families that are 4 or less choose a 4 qt slow cooker and just adjust the recipe ingredients in half. No need to change the cooking times.

    How do I store leftovers?

    Always store leftovers in clean, food-grade containers. The type of container doesn’t really matter. Use zip lock, glass, plastic,  whatever!  Make sure to store any leftovers in an airtight container.

    Ingredients

    • 1 20 oz can of pineapple chunks, drained
    • 12 oz  jar of apricot jam
    • 12 oz jar of Thai sweet chili sauce
    • 2 tablespoons of soy sauce
    • Garnish: dried parsley flakes (optional) 

    Instructions

    1. Cut the turkey kielbasa sausage into large chunks.
